Care and handling of Renaissance cutlery.
Performance can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Always store in the cutlery block to preserve cutting edges and prevent injuries.

Lest you think I am joking, my wife broke the tip of the paring knife. Evidently, jabbing a knife tip into a frozen chunk of meat and then flexing the blade side-to-side is an acceptable way to divide a large piece of meat. And one or the other seems to have used the chef's knife as a mallet or something. The handle has a small crack, which I just noticed. These people cannot be trusted with fine quality cutlery.
Honestly, I have never heard of Mercer Culinary before this. I thought it is a new consumer grade products company. It turns out they have been supplying cutlery to culinary schools and working chefs for decades. The local restaurant supply store sells them. They are truly professional quality.
The knives are individually packed and have their own slot in the block. My block is well constructed and everything is properly finished. I would prefer additional spaces for a steel and knives but can accept that it would detract from the simple visual appeal.
The blade steel is excellent quality and the knives are quite sharp straight from the box. Mine could probably use some honing to align the edges. I do not know how long they hold their edge but suspect they should perform similarly to the Wusthof. Regardless of brand, I highly recommend watching Craftsy's free Knife Skills class taught by Brendan McDermott.
This is my dilemma: do I let known abusers use this knife set or keep this for my own use? Students and professionals are the most demanding users, and if Mercer Culinary can supply those audiences, they should be able to withstand a couple of home (ab)users. I'll keep the Wusthof knives tucked away.
In short, great knives at a great price.
