The Messermeister Meridian Elite 10" Chef's Knife, also known as a Cook's Knife or French Knife, is the most versatile knife in the kitchen and thus the most used blade style by professional chefs. The broad bladed knife has a spine which gradually tapers to the cambered, cutting edge and creates a pointed tip. This knife also has a bolster in front of the handle which gradually tapers to the tip. Because of this geometry, this is the one knife that should be well balanced with weight distributed equally between the handle and the blade.

With a broad blade (at 2-1/8 inches, it's a bit wider than many manufacturers' blades) and a curved edge for rocking through a chopping task, this 10-inch chef's knife suits big-handed cooks. One of Messermeister's top-of-the-line Elite knives, which are distinguished from the company's first-rate San Moritz knives by a three-step hand sharpening process blades undergo and classic three-rivet, full-tang, seamless polymer handles, the knife is forged from a single piece of high-carbon stainless steel. The blade has a shortened bolster so it's sharp from tip to heel and a cook's forefinger rests comfortably on it. Made in Germany, the knife comes in a padded gift box. This chefs knife has served as a replacement for my henckels for five years now. Five years of hard work in numerous high volume kitchens. The spine is smoothed over to prevent serious cooks calus, and since the bolster does not extend all the way down to the edge its easy to sharpen the whole length of the blade. No bowing, no grinding. Also the blade is ground at a steeper angle than most german knives resulting in a sharper (altough more fragile) edge. I find the balance perfect for me if youre looking for something more blade heavy try japanese style knives, more handle heavy get a Dick or a henckels cermax. Also stick with a fine cut steel for this knife.

...and this is a great knife. The balance is perfect for my hand and the angle of the edge and its keenness make kitchen work safe and fast. Highly recommended, but use a good steel before and after every use and protect that edge! You can use a knife block, hang it from a magnet, or use a commercial edge protector, or make your own from some cardboard and tape. I highly recommend this knife for people who love to cook because it just adds to the joy.

I never owned a forged kitchen knife before. These are my first. After researching all the forged knives on my list, I finally decided on the Messermeister Merdian Elite. This model has the Classic handle. These knives are awesome. I've been using them daily for the last 2 months and they still haven't seen a steel. Super sharp right out of the box. Like German quality? What more knife for your money? Then you can't go wrong with these.

Many serious cooks think that Wusthof Trident or Henckels make the finest German knives. I thought that too until i was turned on to the Messermeister brand at my local restaurant supply house.These knives are very similar to Wusthof Trident, but from my experience they are definitely better. They feel sharper when new, and seem to hold on to an edge longer. Since I use mine many times per day, I buy a new Chef's knife every few years, so give messermeister a try, and see if you don't agree that it's the best widely available German Knife.

I have big hands, so banging my knuckles into the cutting board has always been a problem. Not so with this beauty. It's an all-around nice knife with plenty of knuckle clearance. It is also surprisingly light for how enormous it is.

I bought this knife as a gift because I have used one just like it for years and its my favorite kitchen implement. Its very sturdy and holds its edge well despite all my abuse :-) This brand isn't one of the better known ones but it really should be as its quality is excellent!

This is a workhorse. I already have a complete set of MAC Superiors, and they are excellent, too, but wanted something with some heft to it. This was the answer. 9" is PERFECT, especially if your counter space is at a premium. Much better than the other well know brand German knives.

Was hoping for E/3686-10 (pictured), ended up getting E/3688-10 (the slicer). At this point, I'm using the 8" chef's knife enough, I figured I'd keep the slicer and get the 10" chef's knife when I needed it.
