The Messermeister San Moritz Elite 8-inch Chef's Knife, also known as a Cook's Knife or French Knife, is the most versatile knife in the kitchen and thus the most used blade style by professional chefs. The blade is shaped so that it can peel, trim, slice, dice, chop, mince, vegetables, fillet fish, and cut meat. Each part of the knife is designed to perform a different task. It is the flagship of cutlery.

This chef's knife has a broad blade (at 2 inches, it's a bit wider than many manufacturers' blades) and a curved edge for rocking through a chopping task. The 8-inch blade suits most cooks. The knife is from Messermeister's first-rate San Moritz line. Forged from a single piece of high-carbon stainless steel, the blade has a shortened bolster, so it's sharp from tip to heel and a cook's forefinger rests comfortably on the blade. Molded from a polymer that won't crack or warp, the handle is tough and contains a nearly full tang. The plate on the handle's end for engraving initials bespeaks this German manufacturer's reputation as a supplier to professional chefs. To keep the blade sharp, it's best to hand wash this knife in soapy water. --Fred Brack

Having been a Meat Cutter in commercial/wholesale/supermarket settings many years ago, I had acquired an appreciation of quality utensils. In the intervening 50+ years I have used/owned many good and bad such knives and as far as I am concerned this is one of the best high-end products I have ever used.

This is easily my favorite chef's knife in a collection of over 2 dozen, ranging from Wustof classic and cordon bleu, Shun, Global, Mundial,
MAC, Henckels ProS, 4 star 5star, Mercer, Calphalon, etc.
The Messermeister has a wider blade than almost anything out there, but is suprisingly easy to lift and hold. The handle is on the smaller side, not quite as small as Japanese knifes, but not uncomfortably large. The handle also has a small spot to engrave your initials so you can tell it apart from the other chef's knifes, but in 20 something professional kitchens from coast to coast I have never come across anyone else who carries these knives.
The bolster of the knife lacks the wide heel of all but the cheapest and newest high end knives that makes it easy to sharpen and maintain, and avoids that annoying "bump" you always develop after 6months of work on every other 10"chef's I own.
The editorial review may or may not mention that from the factory it comes with a much sharper blade angle than any other knife available, and it is easily the sharpest out of the box chef knife I have ever used, including the japanese models.
All in all, it is the best knife I have ever owned, and the extra 4or5% that it costs over the other high end chefs knifes is more than worth it and in hind sight even if it were a hundred dollars more it would still be the best purchase I have ever made.

Ok so I'm not a professional chef or anything, but I do enjoy cooking and do it a lot. Although I'm a "lay-cook" I recognize the value of proper high quality tools for the job. I did a lot of research before purchasing this particular knife, and while I wouldn't say its the best for everyone in every cooking situation of course, all things considered (steel, edge retention, length, price, etc.) it represents an outstanding knife by any standard that any cook (even professional ones) would be proud to use.

I leave it to the reader to research the nitty gritty details and technical specifications if you're so inclined; I'll just keep this review short, covering only what I consider highlights of the knife.

1. Length. When researching kitchen knives, I came across An Edge in the Kitchen: The Ultimate Guide to Kitchen Knives -- How to Buy Them, Keep Them Razor Sharp, and Use Them Like a Pro...great book by the way...which advised considering the 9-inch length due to the "just right" feel and extra versatility. I took the advice and am glad I did. The length is perfect. It allows me to safely and effectively slice "bigger" jobs like halving Acorn Squash yet its not too bulky to mince garlic. You'd be amazed and the difference that one inch makes, whether above the 8-inch or below the 10-inch...the 8 is arguably too small for some things and the 10 just feels enormous and somewhat unwieldy in certain situations.

2. Ergonomics and "feel". This is obviously a classic knife design, and now I know why. It just works. It inspires confidence with the comfort that goes along with using it.

I LOVE this knife. I researched a lot of knives before getting this and I'm extremely happy with it. It's remarkably sharp new and hold an edge really well. The balance is great and I like the grip. It also feels very substantial, solid, and well made.

When I got this thing I thought, Wow, I should have gone with the 8" because it is huge. However, having used it just one for vegetable chopping, I am glad I took another reviewers advice and went with this. Well balanced, works well on my 15" cutting board, chops nicely, the weight is just right. I couldn't be happier with it.

Knife glides through anything. Perfect weight and size for a home chef wanting a high quality knife! I make knives as a hobby but all of mine are non forged and though they are good steel I really wanted a knife set that matches and is easy to maintain. This knife doesn't cut through things it glides through them. Total different experience compared to other knives out there on the market. I love everything about this knife and my wife even thought it was well worth the money and she is frugal.

You wont be disappointed.

Two great friends of mine gave me this Messermeister knife--actually, the Meridien Elite version, which simply has a different handle design. They explained that someone who loved cooking and entertaining the way I did shouldn't have my crappy knives. That was 5 years ago, and this knife still amazes and delights me. True, it is very large, and I use it for big items, like carving a huge brisket. But it also remains my favorite knife for routine tasks, like cutting onions and garlic, and even for some fine work (the tip alone can be used on tiny tasks, like scooping out a bruised bit on a peeled apple). The handle remains in absolutely perfect condition after more or less daily use for 5 years. (I don't put it in the dishwasher, though, so your mileage might vary if you do that.) This knife is remarkable!
