The pan comes with a recipe for tea cakes, but I've come up with all sorts of other ideas! My first creation was what I call "Orange Gems." I used the new Pillsbury Orange Dreamsicle cake mix, then filled the indentations, piped orange frosting on top, and sprinkled them with orange colored sugar. Very easy, but they looked like they took hours! (The cake mix gave me 40 mini-cakes.) I sprayed the pan with an oil/flour mix, and the cakes fell right out. Don't fill the wells more than about 2/3 full, otherwise they'll overflow.
Next I made Raspberry Brownie Bites - using a brownie mix for a 9 X 13 pan (this gave me 20 "bites"), I filled the indentations with raspberry jam...huge hit! Caution: With a heavier batter, make sure you grease the pan very, very liberally, otherwise the edges might stick and break.
Once I got started, the ideas started to come:
Lemon cake filled with lemon curd.
Mini strawberry shortcakes, with one perfect strawberry.
Cornbread filled with tuna or chicken salad, and a piped swirl of savory cream cheese on top. Or maybe a finely-minced seafood salad, with a tiny shrimp atop the cream cheese topping.
You could make white cake filled with jam, and color buttercream pink or blue for a baby shower, or match the bridesmaids' dresses for a wedding shower.
Fill the wells with a melon-ball sized scoop of ice cream, and drizzle chocolate or caramel sauce on top.
If you're looking at this pan and think you don't need it or would never use it, guess again! I find myself reaching for it more than I do any others!
Make sure you use a cooking spray such as Pam or the edge that holds the topping in will get ripped off when removing from the pan. Other than that, this thing works great; and the mini cakes are a party favorite.
