Product Description

The Kyoto Series new advanced ceramic with a deeper blade and ergonomic handle for precise control. The high polish, rounded-tip blades made out of this ceramic are (and stay) super sharp for a very long time. The soft touch handle is made of fiber reinforced synthetic material and offers a very comfortable, secure grip and ergonomic shape.

    This has to be one of the best knives I've ever used and I've worked in the food service industry for many years. This is a larger bladed knife and us super good for vegetables, meats, slicing thin tomatoes... it does it all while the food maintains its integrity. The balance of this knife is sweet! I love the curve and feel of the handle. I grab this knife before all the ones I've had before... and I'll probably throw away or give away a lot of my old metal knives. This would be a nice gift for the chef in the family... those who love to cook. It did not come with a hard plastic sleeve for the drawer, but has a thin plastic clear sleeve. I just clean this, put it back in the box and made a place for it next to the silverware tray on the right side in the drawer. It fits very nicely there. I think with use it isn't going to stay there, but since its new, it has this special home. :)

    Although the Kyocera is king, this knife is very enjoyable to work with. Yes, the Kyoto is noticeably less sharp than the "King of Ceramic Blades", and is heaver as well, the Kyoto still cuts easily whether through pineapple or celery. I would feel safe to allow a teenager or someone new to ceramics use it because it is not so sharp. Hate those cuts.

    It's made for someone with a large hand and good grip because this 8 inch knife is large.

    I had thought to return this knife or give to a friend because I love the Kyoceras, but the Kyoto doesn't "bite" my fingers and would more likely withstand being dropped since it is relatively thick.

    I think this company may be a future rising star in cutlery. I'm quite pleased.

    The only thing that I wish it had, and this is the sole reason why I didn't give it a extra star, is a blade protector. Still, the box it comes in is excellent; it hold it very nicely. The Kyoto box, however, is better than the Kyocera's.

    The old adage: "you get what you pay for" could not be more applicable than in the case of this knife. I paid only $5.95 for a "Kyoto Ceramic Chef" knife, and I got a tool, in an impressive case, that looks like a chef knife but cuts like a butter knife. I am not exaggerating (not a lot). My first attempt at cutting was slicing a nice ripe tomato, it would not cut at all, more pressure, less pressure, sawing, no technic worked. I finally stab the tomato with the tip of the knife (yes very sharp) and use the incision to cut, repeating the stabbing for each slice.
    Then I tried to cut in half a succulent Florida grapefruit. It did not cut through the skin until after I stab the fruit with the sharp tip of this tool.
    I am not sure how this tool will be useful in the kitchen or in the shop, but I am sure it will come handy for an unforeseeable purpose. So, I will keep it, after all I only paid $6.00 and I got what I paid for.

    This knife is not as sharp as I would have hoped it would be, at least that's the way it seems. I have only used it to dice onions but it had difficulty and I was a little disappointed. Nevertheless it is a nice knife and pretty sharp, the edge is not straight it is curved so it has to be rocked to finish the cut. It comes in a very nice box with a lid that has a magnetic closure, and has a plastic sheath, and is a comfortable fitting knife. It is pretty too. Nice knife.

    Super sharp, great design. The blade being a bit long made me use my index finger to push down on the back of the blade as I cut, but with a little practice I learned to use the curve of the handle to get more downward pressure. This is a good deal for under $25.
