As a working woman I was looking for ways to feed my family but still give them good healthy food.  I hope you enjoy my slow cooker recipes and if you have not been cooking because of time restraints I hope you rediscover the joy that home cooking can bring.

About the Author

Pauline Harding loves to cook for her family.  It is something she has done since she was a little girl and the love of cooking has been nurtured by her own mother since then.  She now wants to share her recipes with others.

She is also passing on her love of cooking to her grandchildren as home cooking can be so much more nutritious as well as sharing some quality time with them and teaching them healthy alternatives.

Her love of vegetarian meals especially will be evident in her books and she plans on making more recipe books in the near future to give you more variety and to meet everyone's taste buds.

There is a hyperlinked table of contents, which is helpful.

The first recipe has a rather amusing typo, calling for "1/2 cup coca powder." I am guessing that the butter, marshmallow cream, and icing sugar are for the frosting, but this isn't specified and no instructions are given for it.

The fajitas recipe calls for "1 tab cilantro." I would guess "tablespoon" is intended, but this is not a commonly used abbreviation for this unit. It does occur elsewhere in the book, as well.

The term "fajita" is misleading; it means grilled meat served as a taco, and the meat is not grilled or even browned in this recipe. Personally, I brown beef before using it in the slow cooker, although I acknowledge that others may not feel this step is necessary.

The Stuffed Peppers recipe calls for 1/4 cup white wine or stock, 1 cup ripe chopped tomato or canned tomato, and 1 cup stock or tomato juice. The instructions say at one point to "pour over the stock or tomato juice," but the reason for the 1/4 cup and 1 cup measurements is not given, and the tomato is never addressed. (Stuffed peppers aren't what I would think of as a Mexican dish, but apparently qualifies due to the inclusion of a sliced jalapeno.)

The pumpkin soup recipe calls for "2 chicken breasts, sliced" but doesn't indicate whether the chicken should be raw or cooked.

I would say that the description of "Mexican Style" is appropriate, given the use of cake mix with cinnamon added, packaged taco seasoning, canned enchilada sauce, canned Mexican-style tomatoes, jarred picante sauce, pasta sauce, chick peas, and the lack of pinto beans. The pumpkin soup recipe is the closest to what I would think of as a more "authentic" Mexican recipe, including black beans, chipotle, and cumin.

As a family we have never ventured into Mexican Cuisine, believing it to be too difficult. We love Indian, Thai and Chinese food, but wanted to branch out intom other cultures. Now we can add Mexican food to our repertoire.
What I liked about these slow cooker recipes is that they are as easy as the author says. I've only tried one so far but the result was delicious.

Author Pauline Harding has compiled a small set of Mexican-style recipes you can easily prepare using your slow cooker or crockpot. The recipes are inspired by Mexican cooking. I loved her recipe for Mexican Chocolate Cake as the recipe uses chocolate chips and cinnamon to dress up a boxed cake recipe.

Other recipes you will find in her cookbook include:

Beef Fajitas (more of a nod towards Beef Fajitas which are usually served sizzling and not cooked in a slow cooker)
Chicken with Mint (Very unique and sounds light plus tasty)
Mexican Pumpkin Soup

Her recipes look easy to prepare and should be perfect for cooks who want to fix something before heading off to work.

You will find an interactive table of contents making navigation easy.

When we’re talking Mexican food, we enjoy it all, and a lot of Mexican-ish dishes get prepared at our house. So when it comes to combining Mexican style dishes and the slow cooker. I am all for it. This little book has even added some deserts to make. For the price it is a good little book. There could be more recipes, but hen the prise would probably go up. I am enjoying the recipes. Yum good.

Love the idea for the chocolate cake made inside the slow cooker. hadn't expected to see that. This book does have recipes for the traditional Mexican meals.
To me they are spicy but I'm used to regular bland food. Like the sound of the combinations on the chicken dishes.

Very cool and unique Mexican recipes for the slow cooker. The book was well laid out and the recipes easy to pull together. Although I downloaded this for free, this is one I would have paid for. In my humble opinion, at $.99, this author isn't overcharging for what she is asking for it. The recipe for the Pumpkin soup and the Mexican chocolate cake are well worth the price of the cookbook! Now, if she raises the price of from that, I would need to rethink my statement.

You can't go wrong with these slow cooker recipes straight from the heart of Mexico.

Dear Lord the Chicken Enchiladas are to die for! ( I add a little New Mexico Hatch Green Chile to kick it up a notch)

and the chile con queso is something I make a big batch and keep around in the refrigerator to dip all week long.

Great recipes, delicious and delightful slow cooked goodness - yummy! Can't wait to try all the rest of these.
