It still looks brand new. I've sanded out a few knife hiccups but I continue to oil it and use only white vinegar for cleaning. I have had so many friends compliment me on how good it looks after 2 years of heavy use. I just love my Michigan Maple Block.
Initially I was going to buy a John Boos cutting board. But as I went through various reviews then it became somewhat overwhelming. High prices and cracked boards not living up to the John Boos name. I had run across this Michigan Maple Block and even with taking into consideration that only 9 people had given reviews all of them positive. I took the chance and I couldn't be more pleased.
This is a large heavy board. I was afraid that even with it's size then it would move around on my slick tiled counter-top. It stays completely in place and doesn't move an inch.
In my research for a good cutting board then I ran across some invaluable information. There is no instructions included with this board on how to prepare it before use. Someone wrote that she followed a simple routine for a new board. She coated the entire board in food grade mineral oil every day for one week. Then every week for one month and then every month for one year. That seems like a simple rule to follow. Before I even used this board then I followed her rule for the first week. In addition to the mineral oil then I also bought Howard BBC012 Butcher Block Conditioner Food Grade Mineral Oil and Natural Waxes. I warm a little in the microwave and then wipe it on and leave a thin film overnight. It's wonderful. I think with a monthly application of that then it will keep it beautiful and lasting for years.
I couldn't be more pleased with my Michigan Maple Block. I'll update this review after a year. But I feel very confident that this is a quality cutting board.
**UPDATE Sept 2014**
I have had other reviewers ask me what my thoughts were after a year. It's been wonderful!! I use it several times a day and overall it looks brand new. There are a few minor scratches as it is a cutting board. But I used some very fine sandpaper and its smooth again. It has never warped or cracked. I continue to oil it every month and I use vinegar to clean the surface. I never use raw meat on it as it's strictly a veggie cutting board. It is also an amazing work surface for pastry. I can roll out biscuits or even puff pastry and it's a wonderful surface to do that on. So the answer is yes. After more then a year I am still very much in love with my Michigan Maple Block.
Mine is also perfectly balanced - no wobble whatsoever. This is a BIG board, though, so do some measurements before you buy. It's also really, really heavy - they aren't kidding around with this thing. If you do a lot of food prep, though, the surface area and solidness are well worth the price of admission, I could never go back to a cheap plastic or bamboo board after using this, it's just that good.
Like any unfinished wood, also, water is the enemy of the cutting board. Do not rinse this board down unless it is absolutely necessary, and only then, as a last resort. A damp sponge with a *tiny* bit of dish soap if it's real messy is all you should need. Yes, this board may stain - it's wood, it's porous, it's going to absorb things. And yes, cutting raw meat on a wood board is a food safety no-no because it's very difficult to sterilize a big board like this without damaging it.
I cut beef, bacon, and fish on it (from a microbial perspective, they're pretty safe as long as you don't let them linger), but I do not prep any poultry or raw pork on this board, and neither should anyone - you could get sick! If you do prep chicken or raw pork on your board, you're going to have to really scrub it, and you're going to damage and dry out the wood. You also probably won't even sterilize it by doing this, as wood is so porous and cutting boards have many razor-thin grooves left by knives in them over time, and the meat juices (and thus bacteria) will get in there.
Anyway, this is an awesome board and I am 100% satisfied with my purchase, just remember: anything this nice is worth caring for, and you'll need to care for it in order for your investment to be truly worthwhile.
