This manual grater finely grinds cinnamon, nutmeg, garlic, or ginger with ease. Originally designed for shaving wood, the patented 18/8 stainless-steel Microplane blade has razor-sharp teeth that make grating effortless and that wont clog. The large 5-by-2-1/2-inch grating surface can handle bigger ingredients, such as large lemons for zesting, and the matching 18/8 stainless-steel frame and satin-finish offer durable support for the blade. The grater has a non-slip rubber grip just above its head to keep it steady on a tabletop during grating. A plastic safety cover is also included to keep fingers safe and to keep the blade from dulling while in storage. This grater is dishwasher-safe for easy cleaning. --Cristina Vaamonde

As for reports of bending it using hard cheese like Parmesan: Please understand at one point I was grating Parmesan five days a week on mine in a restaurant to make Caesar Dressing; so it was being used WAY more that at home and very aggressively. As the teeth dulled over months I found I needed to exert more pressure to grate. Eventually the plane started to flatten and after about nine (9) months part of the tack-weld between the plane and the frame gave out. It still grates but not as easily. The wide face is a huge plus in grating and I can maw thru cheese quickly. I don't like grating cheese on a narrow plane; I end up nicking myself more trying to aim it center of the plane and on large pieces the plane is prone to shaving grooves in the cheese. This plane gives me a smooth, uniform face as I grate.
The little rubber around the foot of the plane will give out over time and in the restaurant I ended up just removing it to prevent anything from coming off and going into the food. It does improve traction but the grater works just fine without it when I angle and set it on the board or table.
All that said, for the use and abuse I put it thru I would happily buy a replacement. Nothing lasts forever and it really does the job for me.

As an aside: nothing lasts forever. I once saw a coworkers trusted classic microplane (the kind with the plastic handle) snap mid-stroke during work and half of it went flying across the kitchen! He was left holding a handle with the stump of a microplane sticking from it. It simply fatigued in the metal and gave up the ghost! Nothing lasts forever and the commercial kitchen really puts things to the test.
As many have already posted, Microplane, in their infinite wisdom, decided to use the most sticky, difficult to remove and nasty adhesive to stick on the labels to the plane itself and the plastic safety cover.
You can remove the adhesive using Goo Gone, which is OK on the plane itself, but it does permanent damage to the safety cover by attacking the transparent plastic. It will soften it & make it cloudy & unpleasant looking. If you do use Goo Gone, wash everything very, very, very well in hot soapy water to make 100% certain you remove all chemical from both parts. You are using this on food, so just take note.
To me the appearance of the cover was less important as it is for safety & saving our fingers when it hides in the drawer, but to others who may want it to look nice, you will not be happy taking this approach.
Other than that, it is a Microplane, if you are thinking of buying it, you already know what is does & how well it does it. I bought 2 at the same time of different grating sizes, I am posting the same review on both as they are technically different products. I do like them a lot, but the adhesive issue has to stop. Seriously, it should not have continued as long as it has.
I did not get paid, reimbursed, of given anything for free (never do as I am not important enough online!) so you are getting my own unbiased, honest opinion & nothing but that. :-)
I thought I could solve the getting-too-close-to-fingers problem with the Microplane glove Microplane 34007 Kitchen Cut-Protection Glove and the grater attachment Microplane 38057 Professional Series Grater Attachment. But in the end I don't use them much. The glove is nice but who wants to wash it all the time? and due to the aforementioned flex, the grater attachment leaves a lot behind.
In the end, the wide paddle only gets used with the narrow grater is in the wash.

I also like the blade cover. With another micro-grater I have had for years there was no cover.Read more
