What it Takes to Make an Extract
While hot sauce can range from mild to earth-shattering hot, a pepper extract hits an entirely new level when it comes to scorching heat. After all, it’s the stuff that military and police-grade pepper sprays are made of; so this stuff is off the scale hot! For this reason, you can’t exactly top off your meal with an extract. Instead, it’s used mainly as a food additive during cooking. Even if you go this route, though, you have to use that pepper extract in a small dose, for a little goes a long way.
Pepper extracts are exceptionally hot because they’re made up of either pure dried chili peppers or a blend of dried peppers and essential oils. Pure capsaicin comes in at 15 million on the Scoville scale, meaning extracts can hit a range that doesn’t even compare to your average bottle of hot sauce. Basically, you get the extract by submerging dried peppers, either dried by you or already dried, in alcohol, drawing out the pepper’s oil. You can use any type of hot pepper you want, but a hotter pepper results in more capsaicin, meaning you don’t have to use as many peppers. A milder pepper takes a lot more peppers to achieve the desired amount.
Of course, this is just a simple way of explaining the process, as it’s actually not advised you do the extraction yourself unless you really know what you’re doing. You definitely don’t want to touch the product with your bare hands, risk getting anything in your eyes, nor do you want to deal with the fumes. That’s because pure capsaicin is not only highly irritating but it can also be dangerous. Luckily, it’s easy to find an array of sizzling pepper extracts already on the market. Just remember, we warned you they’re extremely hot!

Cooking with hot sauce and extracts
If you think hot sauce is just an ordinary condiment to top off food, think again! Sure hot sauce makes a great topping, but it can also add some great flavor while you’re cooking. In fact, adding some hot sauce or hot pepper extracts into the mix while cooking can be a great way to infuse flavor into just about any food. If you’re not too sure about how to do it, we have some great ideas to take you from snacking to dinnertime.
When it comes to appetizers, try mixing some hot sauce into ordinary dips. Traditionally bland cream cheese or mayo always tastes better when you add in some heat. You can also try mixing in hot sauce to stuffed peppers, mushrooms or eggplant, or simply adding it into the mix when you’re making meatballs or burgers. Of course, chili is pretty great too when you stir in some extra spice. From fiery egg rolls to casseroles, just about anything on the menu tastes better when you take it up a notch in flavor. Just remember that when it comes to some of the hottest hot sauce on the planet, a little usually goes a long way. You may want to start small, and then add in more and more hot sauce to increase the flavor gradually.
Another option is to use a pepper extract. Keep in mind, though, extracts can be insanely hot! Only use the extract as an additive, and only use it in small doses. It works well in things like a stir-fry, plus soups and chili. There’s really no limit when it comes to infusing hot sauce and hot pepper extracts into mealtime. So, for me, this has been a great success. I used to squirt them with a super soaker and they didn't like getting wet but they would be back the next day or 2. With this stuff, they don't come back for weeks. It has only been a few months but I think eventually they will develop a better memory. I might try mixing with dawn but so far, squirting the tree a day after a rain or when I see them back, has been easy enough and happy with results.
I use rubber gloves and glasses when using this stuff. Even when I am careful sometimes the fumes still get me coughing.
From a torts perspective, if you plan on putting this product on someone's food, (1) put only a small amount, (2) tell them that it's "a bit spicy." That way, your intended target is at least aware of the risk of the food he or she is about to taste being spicy. He or she is assuming the risk of "how" spicy the food will be, and if they can handle how spicy it is. The "choice" is entirely upon the free-will of the target, and not due to misrepresentation or concealment.
On the same note, please do NOT put this in food and NOT tell the person that it's spicy. Sure, it might seem like a funny thing to do, but it won't be funny if they file a pretty strong tort claim against you civilly. Also, some people are unable to handle spicy foods, or due to some stomach, heart, or GI condition, are extremely sensitive to spicy foods. Giving them food containing a 1mil extract poses a serious risk to their health and life! That means, what you thought was a joke, could end up putting you in jail for reckless or criminally negligent homicide.
As an added warning; please be careful when you use this product. If you don't use gloves, and then rub your eyes later, enjoy the sensation of 1mil SHU on your naked eyes. To enjoy a similar sensation, just allow the sauce to splash into your eyes while washing something or closing the top of the bottle with the cap. If you thought you felt pain from your mouth being on fire, wait till you see what it feels like in your eyes. It's not fun, so please use gloves and glasses, or try to be very careful.

A few of the recipes I have used this in:
I made a 3 gallon pot of chili with a dozen or so habaneros and 4 Carolina reapers, added about 10 drops to it and it was very flavorful with a lot of heat to the point where most hot sauce enthusiasts wouldn't eat more than a bite.
Chicken brest marinated in 15 drops of this, a quart of chicken broth, pinch of salt, liberal amount of ground black pepper and garlic powder. Served over rice with a butter sauce (Butter, garlic, lemon, and chardonnay). It was extra tasty but had an insane amount of heat to the point where my roommates and I were all outside vomiting and coughing after a single bite.
WARNING, THIS IS NOT A JOKE after over a year of use I have only used about a half ounce of this extract. Be mindful and if cooking with it the fumes can cause some eye and nasal discomfort similar to pepper spray.
Will be buying again if I ever run out.
