I love browsing Farmers Markets in Minnesota, especially the Minneapolis Farmers Markets on weekends when the place is bustling with everything imaginable from produce to breads and meats (and the BEST bratwurst and lemonade!).
I was excited to recently hear about a new cookbook available called the Minnesota Farmers Market Cookbook: A Guide to Selecting and Preparing the Best Local Produce by Tricia Cornell. It’s not only a cookbook but a comprehensive guide to choosing, using, and preserving the food found at farmers markets.
It also includes 80 recipes for using seasonal produce supplied by local chefs and farmers. Some of the yummy recipes include Rhubarb-Blueberry Cobbler, Chicken Wild Rice Soup, Sour Cherry Chocolate Loaf Cake, Grilled Minnesota Pork Tenderloin with Heirloom Tomato-Green Onion Relish, Grilled Mushroom and Roasted Garlic Pizza, and so many more.

Though I love Farmers Markets, sometimes I see so much food available that I don’t know what to do with. Tricia Cornell‚ author of Minnesota Farmers Market Cookbook‚ Eat More Vegetables and writer for the Heavy Table‚ has recently introduced a new title. It is a collection of approximately 80 recipes from local chefs and growers plus her own recipes in Minnesota Farmers Market Cookbook. This book has a huge variety – Yak and Green Chili Stew to Daikon Radish Pickles. I did not realize that yak was even raised in Minnesota and so far I am a lifer of this state minus a few years in ND for college.
Beyond recipes‚ Tricia shares how to select ideal produce‚ when to find them at the market‚ and how to properly store them. Minnesota farmer markets across the state and in the metro are mapped in the front of the book for your convenience too.
I made the Rhubarb-Blueberry Cobbler from Minnesota Farmers Market Cookbook and had a few friends be guinea pigs with my family. It received rave reviews. :-) My rhubarb and blueberries were frozen‚ but it was still a tasty delight.
I can’t wait to experience new tasty pleasures during the upcoming Minnesota growing season with Tricia’s collection. There are ways to prepare Minnesota staples‚ like wild rice and apples, plus the yak or fiddlehead ferns. I think buying local is very important if you can’t grown your own.
