Here are my recommendations:
1. Use an oil-based product unless you will have issues with the higher VOC's. It should be noted that this product still has some VOC's and should be used in a properly ventilated area. The oil-based product can also be thinned for the initial (and perhaps all) coats.
2. Use a product that has higher varnish content. Polyurethane is a plastic, thus the plastic look. I recommend General Finishes products.
3. Make sure that the area is dust free before you begin. If you are concerned about dust nibs, this is the best way to prevent them.
I intentionally ordered through Amazon as the closest location that sells this is 20+ miles; and with three kids under the age of 3, I did not want to be hauling them out in the snow to get one can. Lesson learned.
I've used this over several types of stain, as well as over acrylic paint. I like to paint our outlet covers to match the wall paint so they fade into the wall. The acrylic paint alone leaves them somewhat prone to scratching. But by applying one or two coats of the polycrylic over the top, they have a hard long-lasting finish that blends in with my satin wall paint just fine. I even used this over the top of repainted knobs on our kitchen cabinets with great success.
One caution is that over some stains, you get a little residual color that tints the stain, but it's so slight that I've never had a problem using the stain for other projects. I use it right out of the can and use a synthetic brush, and the texture stays thin and easily spreadable as long as the can lasts.

Would caution that it is not the clearest finish I have worked with. This seems to have a coat which darkens timbers only slightly less than an oil based poly. There are other water based polys I have used which resulted in a closer color to the natural wood, however this pales in significance when compared to the quality of the finish
