Vietnamese Chicken Soup - a Miracle Noodle family favorite

Preparation:

1. In a 3 quart saucepan, bring chicken stock to a boil over medium-high heat. Add garlic, ginger and cardamom and let simmer for 10 minutes.

2. Drain the water out of the package, rinse the noodles in cool water for 10-15 seconds (the konjac plant aroma is normal and will go away fully in the next step). Put in boiling water for 2 minutes. Then dry the noodles by placing in a non-oiled pan on medium heat until dry. Divide noodles into two bowls.

3. Add chicken to stock and let cook for 5 minutes (until completely cooked).

4. Pour soup into bowls over the noodles. Divide bean sprouts between two soup bowls then top each serving with half the scallions and chili sauce.

5. Garnish bowls with a slice of lime and chopped cilantro.

Okay so I was really skeptical with these, I didn't know what to expect. All the reviews are all over the place. I took the plunge and you get to benefit from it. I am writing this as I eat it.

First off, You will be hit with a seafood smell once you open the bag. This is normal. If seafood turns your stomach turn the other way and don't look back. If you cannot handle that you will not like the noodles just from the beginning smell. This smell practically goes away once cooked. There may be a TINY hint of it after cooking.

How I cooked them for the first time ever...

I started off following the instructions on the package, drain noodles, rinse, boil(I added a bit of chicken broth, salt, garlic into the water), dry in a hot pan. Once I felt they were dry I pushed these to one side of my pan and moved the heat to the other side, I dumped a small can of tomato sauce(20-40cal) onto the noodles. I dumped in a small can of drained mushrooms into the empty side and started heating them up. (I like to just add crap and see how it tastes).

I let the mushrooms cook for a while and threw in my pre-cooked chicken and broccoli to heat it up. I added some spices (salt, pepper, and a bit of stevia). Once I felt everything was hot I took it off the heat and mixed everything together. I used 2 bags of these noddles with about 200g of chicken breast.

Total calories are somewhere around 400cal for a monster plate of food! This alone is enough for this to be worth it! I'm not sure I'm going to be able to finish all of this and I can eat a lot.

The texture is exactly like mushroom's texture (nice coincidence) This is not like traditional noodles texture. For me, this is absolutely fine because of the super low-calorie filling meal. The noodles pretty much taste like the sauce.

Overall they are worth a try If you don't get sick from the smell of seafood. I didn't notice while cooking but everyone thought I was cooking fish and said it smelt really fishy. I think my next recipe is going to be a shrimp scampi type of dish. Good luck!

I got these noodles while losing weight. I have a major weakness for pasta, but can do without the calories and carbs. These were a pleasant replacement! They are incredibly fast to heat (just a minute or so in hot water) and we just dropped them in for our ramen or various other soups so far.

I tried a noodle by itself to get an idea of the flavor. It doesn't have much. The very, VERY subtle flavor is neither good or bad. Overall it ends up taking on the flavor of whatever you cook it with.

I have 2 complaints. My first complaint (which honestly I haven't attempted to rectify by cooking longer) is the SUPER small crunch inside the noodle which identifies it as a plant. It's fine when eating it with other veggies but if you're using it as a replacement for spaghetti, it's weird. Again, it might be fixed by cooking it longer than a minute in boiling water and does not detract from the dish's flavor.

The biggest second complaint is the price. The package comes as 2 servings and it ends up being $3.92-ish a package. For 2 servings that makes me wince slightly, but for 0 calories, 1 carb and 2g of fiber, it's an excellent replacement overall! I'll almost certainly buy these again.

Great Alternative For Fellow Low-Carbers Or Keto Dieters!

Many hours spent on YouTube looking at some new low-carb recipes that I can start making introduced me to these Miracle Noodles. I had never heard of them in all the years I've done low-carb and I was excited to try them.

Full Disclosure: I have only tried one of the three versions from this variety pack. The Angel Hair pasta is so far the only one I have tried.

Cooking the "Pasta": From what others have advised from YouTube, in order to take most of the slimy feeling out of the noodles, it's best to disregard the cooking directions found on the package and instead do it this way; rinse noodles in cold water in a colander for close to a minute or so. Then heat up a non-stick frying pan and place them in there. Stir on med-high heat until most of the moisture is out of the noodles. Don't worry, this won't actually fry them up and make them crispy. This only removes the moisture and therefore lessens the amount of slim that are naturally found in this product. Once you're finished with that, you can now add any sauces or veggies or anything else you plan to add for your recipe.

Taste: Even doing that frying trick, the noodles were still a bit slimier than traditional angel hair pasta so it won't be a perfect taste match to your favorite pasta dish.

Good Alternative: For the stats; 0 calories, 0 carbs this is the BEST substitute for those of us on a low-carb or keto diet plan. Even traditional low-carb pastas can't claim to have 0 calories and 0 carbs like Miracle Noodle can. So these are perfect if you plan to eat "pasta" more often than once a week. If you only eat pasta occasionally then eating the low-carb traditional pastas would probably be better since those actually are noodles just made with alternative flours instead of white flour. But, if you're like me and you enjoy rice and pasta a few times a week than the Miracle Noodle and Miracle Rice may be the best route to take.
