The Zojirushi was a set and forget machine. Yes, there were a couple of traps if you weren't careful. Leave any water in the carafe prior to brewing and you're going to have a mess. You get the same outcome if you aren't careful about meticulously cleaning the basket. All that said, 95% of the time, it made a good hot cup of coffee on its timer and the vacuum carafe meant it wasn't going to burn if you let it sit.
The Techniform demands more attention. It has no timer, so you are going to have to be there to push the button. And frankly, if you want the best coffee, you're going to need a coffee ritual. Here's how ours goes:
1. Fill the water reservoir to the 10 cup mark with cold filtered water.
2. Fill the carafe with hot water and put it aside while you grind your beans (and maybe have a glass of orange juice); you want the vacuum pot hot before the coffee hits it.
3. Measure 50 grams of coffee beans on our kitchen tare scale, grind them and put them in a paper filter in the basket (others pay prefer anything up to about 70 grams, but for our beans, 50 is more to our tastes. While our vendor included a gold filter, Technivorm doesn't recommend it).
4. Empty out the carafe, put the brewing (not storage) lid on it, slide it under the basket, and hit "On"
5. Wait the approximately 7 minutes to brew the coffee.
6. Hit the power button to "Off" (not strictly required -- you are just turning off the light; the coffeemaker automatically shuts off everything else), pour a cup of coffee for yourself, and put the storage lid on the pot.
7. Clean out the grounds and the brewing cover to keep them clean.
This sounds like a lot, but it's really just a 10-minute ritual end to end. The result is consistently an excellent cup of coffee unmatched by other makers.
If you are wondering if this maker really delivers on the appropriate coffee temperature, we have measured it with a precision Thermopen, and it's consistently 197-200, which is what the specification is for proper brewed coffee.
Bottom line: If you want a set and forget coffee maker that makes good coffee, this probably isn't your machine. But if you are up to having a precision morning ritual that creates great coffee you can't get any other way, you'll love this one. We already do.
Pros: the coffee is hot, and it brews fast. It tastes better than average, but not transcendental. The carafe also keeps coffee hot for a long time. The parts are replaceable.
Cons: the carafe is a bit of a nuisance to wash, because the opening is narrow and water collects inside that is hard to get out. (it needs to air dry) When you put the "travel lid" on the carafe with hot coffee in it, it creates quite a strong seal, and it can be very difficult to get it off! I surmise that this pressure is what eventually made my travel lid snap right in half after not very many uses. (I use the lid only on weekends, and less than a dozen times total since I bought it) When it snapped, I realized that the lid is made of thin plastic, with a styrofoam core. It functions well, but it's a bit flimsy.
Technivorm service is great- very prompt, and friendly. Unfortunately, if you buy through Amazon resellers, it isn't "authorized", and the warranty doesn't apply! So, WARNING! CHECK THAT YOU'RE BUYING FROM AN AUTHORIZED RESELLER! Many sellers on Amazon aren't authorized, and Amazon won't clearly tell you which are and which aren't. The wonderful 5 year warranty does you no good, if it won't be honored.
The coffee that is produced is noticeably smoother and without bitterness even when brewed very strong. I don't bother with pre-heating the thermal carafe and the coffee stays hot for the 1-2 hour holding time I need. The CI review recommended using 1.5 to 1.83 grams of coffee per fluid ounce of water - 64 to 78 grams for the 42.5 ounce "10 cup" capacity. I've found the lower amount produces the strength I prefer but YMMV. Many may find this to be a lot more coffee than they have used in the past but the lack of bitterness from this unit shows up weaker brews as having a watery taste. I use a Cuisinart DBM-8 burr mill and the 8/10 cup settings match up almost perfectly with the 51/64 gram weight needed. I use a $4 mesh filter instead of paper and it works just fine. I don't think anyone needs to buys the special paper filters offered by the manufacturer.
A couple of quibbles: As noted by other reviewers, the plastic parts are very light weight for an appliance that costs this much - had they been sturdier I would have rated the unit 5 stars. Also, the 42 ounce capacity is on the low side if you're serving a crowd. The short brew cycle (under 5 minutes) does help if you need more.
Bottom line - nobody needs a $300 coffee maker but I think this one is worth the price.
Cons: thermal carafe does not keep the coffee hot very long, especially with a less than full carafe. Half carafe coffee at 185 degrees at start, drops to 155 degrees after 45 minutes (measured with digital cooking thermometer). A bit awkward to add coffee grounds and took some getting used to (need to remove the top then slip out the filter holder, add coffee, install filter holder, slip filter holder back in).
