Great rice flour for mochi balls, gluten free foods, and backpacking muffins. This is a finer, smoother texture than another brand I have tried. One of these boxes measures about 3 1/2c of flour. That amount made two dozen blueberry muffins.

Brought back childhood memories, when I visited my grandmother in Tokyo as a child, she added water to rice flour until the softness of the ear, and then roll it into a large marble size then squish it then drop each of them into boiling water, when it floats take it out and drop it into ice-bath, then drain, toss it around Kinako (soy flour) and sugar mix, great fun snacks.

I really like this product compared to what they have locally (which isn't much in my small town)! It's really smooth and makes delicious mochi as well as chapssaldeok! I use it only for making my Korean desserts, but otherwise really enjoy the consistency. Very smooth and not grainy. Mixes up in a cinch! for the price I'll continue to purchase it from Amazon!

This came in a plastic sealed 3 pack. There was some powder that had escaped the box through the seems but that really didn't bother me- 'eh life.' I used this to make Japanese dango with just the rice flour and silken tofu to make the dough, boiled till it floats. Tasted pretty authentic so far as I remember. It's been about 10 years since I was in Japan but out of the blue I decided I wanted dango and this was the purchase needed. Definitely recommend for all your authentic Japanese cooking. Super convenient that it comes in a three pack.

This works well for gravy. It is my favorite thickener. It freezes and thaws well although gravy sitting in the fridge for 3 days will thin. But I freeze and thaw my gravy or mushroom soup just fine. It thickens clearer than flour but not as clear as corn starch. I've found Mochiko Sweet Rice Flour is smoother and works better than other brands of sweet rice flour. I stir in 3 Tbs in 2 cups of cool/warm liquid, heat to boiling stirring constantly and remove from the heat. It will thicken a bit more as it cools. I do not mess with making a roux.

I wish I knew about this wonderful product sooner! It is a must, not only for those who need to be gluten free, but for every good cook out there. It makes the silkiest lump free delicious sauces ever! A perfect thickener for gravy, white sauce, cheese sauce, etc. I used it to make the most delicious homemade cream of mushroom soup. Much better than cornstarch often used for gluten free and my wheat flour eating family have no idea I used sweet rice flour instead of wheat flour for the sauces, stews and soups. Also makes great gluten free pancakes and waffles as well as cookies! Though it is good for sauces, pancakes and cookies as a direct substitute (tsp for tsp, cup for cup), please note it does not have quite enough binding property to use on it's own in baking cakes, muffins and breads or other raised items. You will still need to add xanthan gum or other gum product to achieve good results in baking.
