Star Fruit Fizz with Agave
Star fruit makes a perfect combination with fizzy club soda and agave syrup—a vegan alternative to honey. Agave dissolves quickly, bringing a delicate, sweet taste, while the fennel seeds add a licorice taste to this drink.
This drink, with its double treat of fruity flavors and vibrant red color, combines the health benefits of pomegranate and cranberry.
Elderflower, Mango, Ginger Drink
This mango-ginger combination works beautifully with elderflower water. For variety, add a cup of cranberry juice to bring a little acidity and a light pink flush to the drink.
Hibiscus-Ginger on the Rocks
Hibiscus has a rich color and a very subtle, earthy flavor. Pair it with ginger, which adds a spicy zing to the drink and helps elevate the delicate taste of hibiscus.
Carrot, Green-Grape, and Mint Drink
Carrot juice and green grapes, combined with cinnamon, make a revitalizing antioxidant base, while lemon zest adds a burst of citrusy top notes and fresh mint leaves give a refreshing finish.

Overall, I love the book
Most of the ingredients needed are readily available. There is much use of fruit, tropical and otherwise., spices and edible flowers there are some ingredients, sugar cane juice, mangosteen juice, elderflower
essence, are available online. The recipes can get costly and depending on availability may relegate this book to special occasions only. virtually all of them contain sugar or other sweetened. Experiment to taste. With sweet fruit the sugar can be cut back if not eliminated. I wish there were substitutions, ie. swapping canned sugar cane juice for fresh sugar cane juice really doesn't count. But I see no reason why peaches couldn't be instead of mangoes or regular oranges instead of blood oranges. But whether you follow his recipes or not, this book inspires creativity especially with spices. It is an attractive and fun book that involve no fussy or difficult techniques.
The shrubs are my favorite section - I'm a HUGE fan of them, mixed with bubbly water. They are absolutely refreshing and tasty, particularly on a hot summer day. Don't let the thought of the vinegar turn you away - they are excellent!
Overall, a great book, worthy of having for those who really enjoy fun drinks and feel left out by the lack of non-alcoholic options out there!
