I will confess to having purchased both the "Gold" and "Silver" versions of this product. Why?? Because I wanted to see the difference in them....And because I didn't know any better at the time. I will just say that this version, the "Silver" sheet, is a good product too. Truthfully, I like the "Gold" sheet better, and if I were pressed about it I would probably say that "Platinum" sheet is the one I would buy next time. That doesn't mean I am unhappy with this product at all. I think it is a good product. But my reasons for switching to sheet gelatin from powdered Knox were such that I should have chosen the top level product to start with.

If you are interested in all of the reasons, you can see my review of the "Gold" sheets. In any event, this product is well and professionally packaged. It functions exactly as it should and does a good job of gelling aspics which is what I tested it on. If you are looking for the clearest solution or the cleanest taste you should probably go up to a higher grade. If you are looking for an easy to use product that is better than powdered gelatin, this one will definitely do the job.

My only real complaint is the complete lack of instruction for usage. I had to spend some time on their website, and a few others, before I felt competent to attempt to use it. Having said that, it is not difficult to use. In fact, I find it easier to use than powdered gelatin.....no measuring, just count sheets!! The trick is in knowing how many sheets to count..!!! Try it out. Neat, clean, professional.

I used this product for the first time yesterday and was impressed with it's ease of use and quick gellification . It was used to make porcini-broth spheres for ravioli. I did not have enough molds for the liter of broth I made, but was able to hold the excess broth at room temp while the spheres gelled for 2 hours, then simply reheat the broth and dissolve the small amount of gelled skin that formed to make another batch of spheres. Not sure if that would have worked as well with powdered gelatin. i'll be stocking up on this product

I should have bought the gold level! These seem to be working just fine though; (it's just that it takes a couple more sheets of gelatin to get the job done. My fault entirely!
