I had purchased Muir Glen salsa in the past and enjoyed it, and I have found these diced tomatoes to be of equal high quality. I will definitely continue to purchase these tomatoes on a monthly basis through Subscribe & Save. Diced tomatoes are a staple in my kitchen, because I use them constantly in Mexican, East Indian and Italian recipes.
I have included below several of my own vegan recipes that I’ve recently used these tomatoes in, with excellent results.
VEGETABLE STEW
This is one of the fastest, easiest, vegan meals I make. By varying what vegetables I put in it and whether I use quinoa or millet or brown rice, the stew tastes different each time, even though it is the same basic, one-pot, stove-top dinner.
Ingredients
1 14.5-ounce can of Muir Glen Organic Diced Tomatoes
2 cups of canned or frozen, organic cut green beans OR 2 cups sliced summer squash
2 cups of cooked quinoa OR 2 cups of cooked millet OR 2 cups cooked brown rice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon oregano
1/2 teaspoon tarragon
1/2 teaspoon thyme
1/2 teaspoon cilantro
1/4 teaspoon sage
1/2 teaspoon Mrs. Dash Original Seasoning
Instructions
•Throw all the ingredients in a large cooking pot and stir well with a big spoon.
•Simmer on low-to-medium heat for 15-20 minutes, stirring every few minutes to keep the quinoa or millet from sticking to the bottom of the pan.
VEGAN TOMATO BISQUE SOUP
This is another fast, easy recipe, and it is delicious! (See attached photos.)
Ingredients
2 14.5-ounce cans of Muir Glen Organic Diced Tomatoes
1 cup cleaned and chopped green onions
1 cup cooked quinoa
1 13.5-ounce can unsweetened, full-fat coconut milk
6 cloves fresh garlic
1-inch fresh ginger
6 bay leaves
½ teaspoon salt
½ teaspoon pepper
½ teaspoon sage
1 teaspoon basil
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon cilantro
½ teaspoon beet powder (optional, deepens the red color of the soup)
2 tablespoons arrowroot powder (vegan, gluten-free thickener)
1 tablespoon apple cider vinegar
2¼ cups water
Instructions
•Place all of the ingredients except the tomatoes and the water in a blender (I use my Vitamix blender). Blend on high speed for 1-2 minutes until all ingredients are pureed completely.
•Add the tomatoes to the blender and puree on high speed.
•Pour the pureed tomato mixture into a sauce pan and use a spatula to scrape out the remaining tomato residue from the blender into the sauce pan.
•Add 1/3 of the water to the blender and run it on high speed. Add that water to the pan containing the pureed tomato mixture. Repeat this process twice more in order to remove all of the pureed tomato mixture from the blender so that none is wasted. Stir the tomato mixture with a wire whisk.
•Simmer the pureed tomato mixture on medium-low heat about 20 minutes to enable the flavors of the onions and spices to blend completely with the tomatoes and coconut milk. Stir once more with the whisk and serve hot.
ENCHILADA SAUCE
I developed this recipe because I wanted a fresh, healthy, vegan sauce for my enchiladas.
Ingredients
2 14.5-ounce cans of Muir Glen Organic Diced Tomatoes
6 cloves raw garlic (you can substitute 3/4 tsp. garlic powder)
1 tablespoon maple syrup (you can substitute 1 T honey or 1 T sugar or 1/4 tsp. stevia)
1 tablespoon apple cider vinegar (you can substitute 1 T lemon juice or other types of vinegar)
1 tablespoon cumin powder
1 teaspoon smoked paprika (crucial ingredient—NO substitution!)
1/8 teaspoon cayenne (optional, since even this tiny bit makes this very spicy)
1/2 teaspoon black pepper (cut back to 1/4 teaspoon if you like a very mild sauce)
1/2 teaspoon salt
1 teaspoon arrowroot powder (optional, helps thicken the sauce)
Instructions
•Drain the juice from the canned tomatoes and set aside if you are using a blender. This is not necessary if you are using a food processor.
•If you are using a blender, place inside it all the sauce ingredients except the drained tomato juice.
•Puree on high speed.
•Pour pureed sauce into a sauce pan, scraping the sides of the blender or food processor with a rubber or silicone spatula to get as much sauce out of the blender or food processor as possible.
•If using a blender, scrape down the sides of the blender to push all remaining bits of sauce into the bottom of the blender (this sauce is so delicious, you won’t want to waste a drop of it). Pour the reserved tomato juice into the blender and run the blender on high speed to clear off as much as possible of the remaining sauce. Pour this liquid into the sauce pan with the rest of the sauce. Stir together thoroughly with a wire whisk.
•Simmer on medium-low heat about 20 minutes to enable the flavors of the spices to blend completely, periodically stirring it with the whisk.
•This sauce can be stored in the refrigerator or used immediately to make enchiladas.

I have received 4 orders of these and there are always some dented cans. In the last 2 orders, very recent, all the cans were dented. As I read up more on botulism and its ability to grow in dented cans, I can't use them anymore.
