What a difference this makes in the final result!! Previously, I had used the dry milk I found in the grocery stores, and will never again buy that stuff. This NOW foods milk is my favorite for several reasons:
1) I use only organic products for my bread, so having the organic milk is a plus 2) I keep this in my emergency/prepper pantry 3) Great for coffee
For those of you wondering about shelf life, I have had mine for 6 months now, and it is just great. I do keep it in a cool dry pantry location (it does not sit out in the kitchen or in a kitchen cupboard).
On another note, I have other NOW products that have made my life easier (no more running around to specialty stores to find what I need)
Memories aside, I used this in my cocktail buns, and I even made a loaf of bread with this and its so good! Today I figured out my tomatoes werent getting enough calcium, and guess what the advice was? Powdered milk, mixed with water, and put on tomato plants. This stuff is super useful, I had no idea.
The organic milk powders are not technically 'instant', because they don't dissolve easily. From my own research, I think conventional milk powder must have a chemical added that helps it dissolve easily. I use a Blender Bottle to mix my organic powdered milk; just leave lots of 'working space' in the bottle when you're shaking it. A 'too full' bottle won't dissolve the powder. An immersion blender also works well, as does a whisk in a big bowl. The Blender Bottle is the most convenient way I've found, though, to make and store reconstituted organic powdered milk.
For anyone wondering, 3/4 cup powdered milk plus 1 quart of water = 1 quart of milk. I used room temperature water and pulsed in the blender. It reconstituted perfectly with no lumps or gritty texture.
Would definitely recommend keeping this in the pantry as an alternative when fresh milk cannot be found.
