Off the bat -- if you're not cooking your pizza at 900+ degrees, you're doing it wrong. Lot's of pizza ovens out there that claim they cook the best, authentic pizza. Once you read the specifications, most of them don't even get close to 900 degrees, and the ones that do cost $700+.
In comes the Nipoli. I'll admit, it was an impulse buy. I was taking a risk on buying yet another crappy pizza maker that makes sub-par pizza that is soft and doughy. How can just a couple of chunks of wood and pellets get this thing up to the proper cooking point?
I unboxed it, filled it with a couple scoops of pellets and laid some wood chunks on top. After about 20 minutes warming up, I took out my trust infrared thermometer (highly recommended as you want to make sure you're putting your pizza in at the correct temp) and to my surprise, it read 940 degrees! I was absolutely elated.
Threw in my first pizza, waited about 20-30 seconds and rotated. Waited another 20 seconds and the pizza was done. It made the perfect Neapolitan pizza. I was absolutely blown away that I made this pizza. The crust was perfectly crunchy with a soft, airy interior. I attached a picture of said pizza before it was completely engulfed in 20 seconds by my roommates and I.
So if you want a wood fired pizza oven that gets up to the required temperature needed to make yourself the perfect professional pizza, look no further.
I sold the Ooni and took a chance on the Napoli and I am glad I did! I love that the fuel tray is quite large so I don't constantly need to add fuel. I also like that I can burn pellets, charcoals, wood chinks, etc. I have found wood chunks to be my favorite and to use a small, USB powered fan to blow into the fuel chamber to give a hotter burn. The oven is fairly light and easy to transport if needed (we have taken it camping). Build quality is nice and sturdy. Pizza parties are great with the Napoli, we cook, eat, and visit and I am not worried about fire management like with the Ooni.
I start the oven by soaking a few cotton balls in Isopropyl alcohol and then laying a few small wood chunks on top of them and light them. Give the oven about 15 minutes to preheat (I like to cook at around 700-800*F) and then I am ready for cooking. I usually put a small wood chunk on after each pizza which will then light, burn hot and then I am ready to cook the next one. Be sure to use hard wood like mesquite, fruits woods, and hickory - don't use pine and other soft wood or it will taste bad.
