America's First Canned Organic Coconut Milk
The Native Forest brand was born in 1999 with the introduction of America’s first canned Organic Hearts of Palm. Unlike most conventional alternatives, the harvesting system of Native Forest Organic Hearts of Palm supports the preservation of native South American rain forests.
Native Forest Organic Coconut Milk (America’s first) is pressed from the nutmeat of mature organic coconuts. It features full-bodied coconut taste with a smooth and creamy texture. Organic coconuts tend to be a little smaller than their conventionally grown cousins, while the organic coconut trees are sturdier and more drought resistant.

Recipes using Native Forest
Mango Tapioca Pudding
Ingredients: 2 cans Native Forest Classic Coconut Milk
¼ cup Let’s Do Organic Tapioca Granules
½ cup Let’s Do Organic Unsweetened Shredded Coconut
2 tablespoons honey
1 can Native Forest Organic Mango Chunks
Zest of 1 lime
Extra honey for drizzling on top
Instructions: Add the coconut milk to a saucepan and heat over medium heat until simmers. Add in the tapioca and shredded coconut and cook for 15 minutes, stirring often. Add in the honey and transfer it to the fridge to set up.
Spoon the tapioca pudding into bowls, top with mango chunks, lime zest, and a drizzle of honey. Enjoy!
Creamy Curried Carrot, Ginger and Lentil Soup
Ingredients: 2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, 2 tbsp fresh ginger, minced
1 tsp curry powder
6 cups vegan soup stock
1.5 lbs carrots, peeled and diced
1 cup split red lentils (200g)
1/2 cup full-fat coconut milk
2 tbsp lemon juice, salt and pepper, to taste
Instructions: In a medium-sized pot, heat the oil over medium heat. Sauté the onions until translucent, about 3 minutes. Add in the garlic, ginger and curry powder. Stir for briefly, until fragrant. Pour in soup stock, scraping the bottom of the pot. Add in the carrots and lentils. Bring to a boil over high heat, then reduce to a simmer for 15 minutes or until the lentils are soft. Remove from heat. Stir in the coconut milk and lemon juice. Blend in batches if using a stand blender, or use an immersion blender. Add salt and pepper, to taste. Serve with a swirl of coconut milk or a dollop of unsweetened vegan yogurt. Enjoy!
Pumpkin Spice Ice Cream
1 15oz. can pumpkin puree
2 cups Native Forest coconut milk
1 cup pitted medjool dates ((about 12))
1 tbsp pumpkin pie spice
Instructions: Combine all the ingredients in a blender. Blend on high until smooth and creamy. Pour into a shallow pan or dish.
Freeze overnight. Remove from the freezer 10-15 minutes to soften before scooping. Alternatively, break apart the pan of ice cream into chunks and re-blend for an even creamier texture. Serve and enjoy!

Organic Coconut Milk (Organic Coconut, Filtered Water, Organic Guar Gum).
Store at room temperature and shake well before using. Once opened, refrigerate and use within 4 days. Product may to separate when its temperature falls below 80 degrees F. This makes the milk appear curdled as the coconut fat separates from the liquid. Such separation is harmless and easily remedied by placing the can of coconut milk in hot water for 15 minutes and then stirring the contents thoroughly.

Our family is on the GAPS/SCD diet and we can't have gums or additives.
I called the company - Edward and Sons - to enquire...Allison from customer service left me a voicemail saying the the company ''does a very good job of homogenizing the produc'' and that's why it doesn't separate, but that it should separate if refrigerated. (It didn't). Brian from Customer service sent an email saying the non-separation was "due to the organic nature of the product".
Wow, talk about 2 'non-answers'. I replied to both and asked for a more in-depth explanation - neither ever replied. I called Allison three times and she never called me back.
So, 2 different people from the same company gave me 2 different answers and neither got back to me....that is suspicious in itself.
And - if this homogenization process is so effective - why do they even have the same product WITH guar gum?
Nevertheless, after being assured by Allison that the product didn't have guar gum, I made a cream soup with it - had stomach pains and bloating both times after I ate it.
If you follow GAPS or SCD, or are just trying to avoid additives, I would caution you not to use this product.
I'm calling Amazon to see about returning it. Either way, I will not deal with Edward and Sons again! I'm going back to Natural Value organic coconut milk which is the real thing - no gums. It's just a lot more expensive, unfortunately.
