These whole dried Asian chili peppers are labeled as mild and I took a small bite and ended up eating half of one chili and detected no heat—just a pleasant pepper flavor. I use peppers like this often mixed with other varieties and heat levels in a number of ways including adding them to the jar when canning garlic, pickles, cauliflower and okra.

I also rehydrate them and blend into sauces and salsas—and they are excellent crushed with the flakes sprinkled into salad dressings, marinades, taco meat, soup or a pot of chili. They can also be ground up into chili powder or if making a custom spice mix. And they can be used to infuse oil and make chili paste.

Dried peppers like this are versatile and their bright red color adds a visual pop and provide a flavor boost to bland foods like eggs but primarily they add complexity to spicy Asian or Mexican cuisine. They arrive in a re-sealable clear pouch but they should be kept out of the light, preferably in a cool dark place and after opening are best if used within a year.
