- Nutmeg, (Myristica fragrans), tropical evergreen tree (family Myristicaceae) and the spice made of its seed. The tree is native to the Moluccas, or Spice Islands, of Indonesia and is principally cultivated there and in the West Indies.

What is Nutmeg?
The spice nutmeg has a distinctive pungent fragrance and a warm slightly sweet taste; it is used to flavor many kinds of baked goods, confections, puddings, potatoes, meats, sausages, sauces, vegetables, and such beverages as eggnog. The fleshy arils surrounding the nutmeg seed are the source of the spice mace. When fully mature it splits in two, exposing a crimson-colored aril, the mace, surrounding a single shiny brown seed, the nutmeg. After collection the aril-enveloped nutmegs are conveyed to curing areas where the mace is removed, flattened out, and dried. The nutmegs are dried gradually in the sun and turned twice daily over a period of six to eight weeks. During this time the nutmeg shrinks away from its hard seed coat until the kernels rattle in their shells when shaken. The shell is then broken with a wooden truncheon and the nutmegs are picked out. Dried nutmegs are grayish brown ovals with furrowed surfaces.
Culinary Uses:
Nutmeg is used for flavoring many dishes. Whole nutmeg can also be ground at home using a grater specifically designed for nutmeg or a multi-purpose grating tool. In Indian cuisine, nutmeg is used in many sweet, as well as savory, dishes. In Kerala Malabar region, grated nutmeg is used in meat preparations and also sparingly added to desserts for the flavor. It may also be used in small quantities in garam masala. In traditional European cuisine, nutmeg and mace are used especially in potato dishes and in processed meat products; they are also used in soups, sauces, and baked goods. It is also commonly used in rice pudding. Nutmeg is a traditional ingredient in mulled cider, mulled wine, junket and eggnog. In Scotland, mace and nutmeg are usually both ingredients in haggis. In Italian cuisine, nutmeg is used as part of the stuffing for many regional meat-filled dumplings like tortellini, as well as for the traditional meatloaf.

Nutmeg Butter BiscuitsIngredients:
Instructions: Preheat oven to 180C. Line two cookie sheets with baking paper. In a bowl beat butter, sugar, nutmeg and egg yolk for a few minutes until light and fluffy. Add corn flour and plain flour. Mix it gently. Chill the dough for 15 minutes. Roll dough into rounds. Place on prepared sheets leaving a 5cm gap between rounds. Bake in preheated oven for 12 to 15 minutes. Remove from the oven, cool completely on trays. |
Apple CakeIngredients:
Instructions: Chop the apples and microwave them for 2-3 minutes then toss with lemon juice. Preheat the oven at 200 degree and grease the tin. Take all dry ingredients and mix well. In another bowl take butter, sugar and vanilla in a bowl and whip until texture becomes creamy. Then add flour mixture and milk. Add chopped apples and fold very gently. Ground nutmeg and add it to garnish. Transfer this mixture into baking tin and bake 35-40 minutes or till fully baked. Cool it and serve. |
Spicy Butternut SoupIngredients:
Instructions: Boil the butternut in the stock water for 15 minutes. Add the milk and cook until butternut pieces are soft. Add nutmeg (grounded), cinnamon, cayenne pepper and season to taste. Carefully blend your soup in a food processor until desired texture is met. Serve hot with garlic bruschetta and crispy sage leaves. |

I used it initially in a fully liquid recipe and with preground nutmeg it often floats on the surface and is initially difficult to get blended in.
This nutmeg only briefly lingered at the surface before blending in with only a good wooden spoon stirring.
HIGHLY RECOMMENDED!!
I hope all of the stock is not like what I received.
