I did take pictures of the 'cookie showdown', but my 2 year old decided to stomp on my laptop screen, so those pictures are unavailable until he can come up with $150... ;) I can describe the results though!

Obviously, the metal cookie sheet lost. If you're having problems with things baking unevenly, it's probably because you're using one of these old guys. The cookies towards the middle of the sheet were still a little doughy, while the cookies towards the outside were pretty crispy.
I saw ZERO difference between the 2 silicone sheets performance. Im guessing that the silicone makes it so heat is distributed evenly throughout the whole mat and that's how everything bakes perfectly. The sil-pat is a tad bit thicker, but cooked at the same rate as the 'silicone baking mat'. It didn't melt in the oven (at 350 degrees f), deform or leave any reside after the cookie was removed. It doesn't need to be greased beforehand either.
I enjoy testing products and always choose to test products I know I'll use. I was given these products at a discount (NOT FREE) to test in exchange for a honest review. I take this job seriously because I know it's influencing how others spend their money. Had I known there were other brands of silicone baking mats available, I wouldn't have spent $25 on 1 Sil-Pat. You're paying extra for a fancy brand name, and not for an extra special product. And just because I like to bend the rules (and I'm lazy), I threw them in the dishwasher on the bottom rack to see if they would melt or deform...NOPE! You're technically suppose to hand wash silicone mats with mild soap and water, but I'm a rebel. I also slammed my cookie cutters down on it a few times and it didn't cut it or leave marks, so that's promising that the product will last through a few beatings.
