Use and Care for Natural Aluminum

• Before initial use and after subsequent uses, hand wash with warm, soapy water.

• Dishwasher use is not advised as discoloration will occur due to the cleaning agents used in automatic dishwasher detergent. This discoloration is merely cosmetic and will not affect baking properties or safety of the pan.

• Natural aluminum pans work well with parchment paper, silicone baking mats, and also traditional butter or shortening and flour methods. When roasting savory foods such as vegetables, butter or cooking oil work well.

• Nylon, wood, or silicone utensils are recommended. Metal utensils and scouring pads may scratch natural aluminum pans, but will not affect baking performance

• Aluminum is reactive to acidic ingredients such as vinegar and tomato products. These foods may darken, pit or corrode the pan after prolonged use.

These pans looked fine at first, but after three washes, I noticed a sloshing sound, and confirming my suspicion, I tapped the pans. They're two layers of sheet metal, and hand washing has trapped water inside... Since then, the pans have begun to stink when heated from the tepid water inside... This of course makes them completely useless for actual cooking purposes.

Nice and thick and doesn't warp in my air fryer oven or conventional oven. I have used it up to 450 degrees. The only problem I have with it is that for some strange reason it "pitted" in a few spots the first time I used it. I cooked chicken breasts with just salt and pepper ( nothing acidic ) when it happened. It hasn't happened again despite cooking chicken the same way or anything else I have cooked in it. I always hand wash it the sink also ( I don't have a dishwasher ) so that isn't why it got "pitted" either. I saw it was "pitted" before I even washed it.

Update: I contacted Nordic Ware about this issue and they very quickly ( same day ) got back to me and are going to send me a replacement pan. This is excellent customer service and I wouldn't hesitate to order from them again.

These are impressive! They don't warp, which is crucial when using to bake cakes. They fit side by side on my oven racks so I can have 4 jelly roll sized sheets baking, roasting, or reheating at once. I typically use parchment paper to line, therefore clean up is a snap. These Nordic Ware Natural Aluminum Sheets are indispensable and I wish I found them sooner!

Quality of 2019 model not the same as the 2017 one

I bought nordicware jelly roll pan 2 years ago and was very happy with its quality and finish. I bought one last week and I am disappointed that they have switched to an inferior quality pan. Its not as heavy gauge as the previous one. It’s slightly lighter in weight, which I presume will affect baking times and quality of baked goods.

And I cannot understand why did they have embossed logo on the top side of the pan! It leaves marks on base of cakes, breads etc. which I kind of hate. Earlier pan had a nice plain smooth base and the branding was on the underside of the pan.

Good quality metal, surprisingly versatile

Fits perfectly in most toaster ovens, and quality metal won't warp. Great for individual sized portions and appetizers. I'd also gotten the other Nordic ware sheets (quarter and half) before purchasing this, and all have replaced pretty much everything I had been using up to this point. I also use foil when cooking pretty much anything to save on the cleanup, but the one time I did get cooked on grease, a soak + scrubbing with bar keeper's friend cleans it right up.

Very Difficult to Clean

These pans seem well made. They are a nice heavy weight, and they did not warp in a 475 degree gas oven. I love the size, too! I bought the jelly roll size, and it is the perfect size for 1-2 people. Two of the jelly roll size would be better than the half sheet size in my opinion. They fit in virtually any normal size oven, and they are easy to store, too. I awarded 3 stars for all of these reasons.

The only complaint I have is that they are impossible to clean. I lined my pan with some aluminium foil, placed a wire wrack over the pan, and then placed some salmon pieces wrapped in foil with seasoning and olive oil on the wrack. Unfortunately, even though I used heavy duty foil to hold the salmon pieces, they leaked oil, and the thinner foil I used to line the pan did not protect the pan as I had hoped it would do in case anything leaked.

Olive oil ran off the sides of the foil and down into the pan. Later, I had a similar thing happen whence I reheated fried chicken pieces in the exact same way. I soaked the pan in hot water with good dish soap and scrubbed with a nylon bristle brush and a sponge. The baked on brown oil would not come off. I then soaked the pan for a little while in hot water with OxyClean, which usually will lift off almost any soil. It did not help this pan, though. It even seemed to take off the finish at one end of the pan. Next, I very lightly scrubbed one small spot with a Brillo pan. It took off the finish. Finally, I gave up and sent the pan back.

If the pan was easy to clean or even hard to clean but you could still get baked on food off safely, I would award 5 stars without hesitation at this price point, but what good is a pan that cannot be cleaned?? Who wants to use a pan with big brown baked on spots all over it? The more you used the pan, the worse it would look. This is not good.

If someone can tell me how to safely and completely clean these pans without removing the finish, I would be grateful and buy them again, but I would not buy again or recommend to anyone else for this one basic reason.

Best baking sheets ever

These are thick, so they will never warp in the heat of the oven, but they’re lightweight. I’ve had them for five days and have used them every day because they’re so versatile—everything from “frying” bacon in the oven to a messy one-pan dinner for two and lots in between—even on the grill (although they don’t say that’s a good use—didn’t hurt it at all). You will never damage these. They’re not going to dent or bend (in normal use), so they’re the only baking sheets you’ll ever need. I originally bought the half-sheet size by mistake and easily exchanged them through Amazon for the quarter-sheet (which is what I’m reviewing here). I like them so much, I’m tossing my current thin half-sheet pans and ordering these again in the half-sheet size. These are great pans and very affordable. The fact that ATK uses and recommends them is a plus.

I'm a skilled home cook and I learned that there's a reason why award-winning pastry chefs like Stella Parks endorses this product. It's thick aluminum build and strong rim make it a reliable workhorse in the kitchen. I feel like they're so durable that I'll be able to pass these beauties onto my children.

I purchased the "3 Piece Baking Gift Set - Aluminum Sheet Pan, SILMAT Silicone Baking Mat & Stainless Steel Cooling Rack" from Amazon CA before trying this brand. Their silicon mat and cooling rack work great but the sheet pan is noticeably thinner compared to Nordic Ware. It pops and buckles under temperatures of 375°F in my oven. The package was a wicked value and I think it's because the aluminum sheets are lower quality.

I use the quarter sheets for everything: getting prep out of the fridge, storing prep, baking, cooling, serving. They're just the most convenient size for many kitchen tasks. I rarely repurchase things but I love these so much I'm going to get another set of quarter sheets, and dole out the cash to get the half sheets too.

Exactly as America's Test Kitchen Reviewed

I did a lot of research when I decided to upgrade my baking ware, including heading to the America's Test Kitchen website . They recommended these as the best and so far I love them! And I can fit them in my European stove which is a bit less wide than "normal" stoves (ie, a 1/2 sheet won't fit). So far easy to clean, but I do almost always line with a Silpat or parchment paper. Some discoloration spots due to my getting baking soda on them, but it did no real damage. With a rack, I use them for roasting, and I can deglaze and make sauce in them on top of the stove. I cannot think that I'd ever use any other baking sheet again!

THEY. DONT. WARP.

I can’t be more clear. My biggest struggle is buying pans where the slightest increase in temperature will warp the pan during cooking. Worse when they leave and then you have hot food violently being thrown at you from the pan. Don’t bother getting any “baking” stuff from Wilton. Spend a bit of money and get a good one. Don’t put it in the dishwasher or else it’ll discolour; just soak for a few minutes and it’s pretty easy to clean.

Professional quality sheet pans for home use.

Being a single guy, half sheet pans are a bit large for me to use on most occasions. These quarter sheet pans are perfect for me for most things. Unlike most department store sheet pans or cookie sheets, these do not buckle when heated up. This has always been a major problem, I have even had a pan pop so hard it tossed some contents right off and I found them burned at the bottom of the oven. This will never be a problem with either these quarter sheets or the half sheet pans I also have from Nordic Ware. They may as well be made of stone, I can't see them popping and I've had them up to 500 F with no trouble. They also heat very evenly as I was able to discern from the batch of chocolate chip cookies I made on Sunday where all the cookies came out evenly cooked right across the sheet. I can't think of a better test than that.

I've noticed others complaining that when they wipe them down with paper towels, they come away grey like the aluminum is coming off. That is perfectly normal as paper towels are very abrasive, to the point where it is not recommended wiping glass surfaces or mirrors or a television screen or computer display with paper towels as they can scratch the surface or remove any anti-glare coating applied to it. If you want to clean these sheet pans, use a sponge or microfiber cloth to wash them and any fabric dish towel to dry them. Anything but paper towels.

I feel better now that I got that out. LOL Overall, these sheet pans are as close to bulletproof as you could possibly get. Being 63 years old, I am certain they will outlive me and I'm glad knowing that I will never have to spend money on another sheet pan again. Now I just need to get a baking/drying rack for both the quarter and half sheet and I'll be all set!

Bottom line: If you need sheet pans, whatever the size, full, half, quarter, whatever... you can't go wrong with these.
