Close to the handle is a serrated edge. Use this to cut the top off the pepper. Then poke the tip of the blade into the edge of membrane and start to twist. The tool really does a great job of scraping *most* of the membrane off the inside of the pepper and collecting the seeds into one tidy wad. Then the barbs on the inside of the tool grab the membrane/seed wad so you can easily pull it out.
However, it's impossible for the tool to perfectly fit every sized pepper. As the sides of the pepper taper to a narrow point, the tool can't reach anymore. So there's no way to get the seeds or membrane out of the last 1/3 of the pepper. Depending on how you cook your peppers, that last bit of seeds/membrane can still be enough to leave too much heat in the pepper.
Although the cored & stuffed peppers I grilled looked fantastic, they were just too doggone hot for most of my guests. I think I may have to go back to slicing them in half lengthwise so I can completely clean them out.
If you can, try to shop for peppers with almost no curve to them, because it's impossible to core out the curved tip. Also look for peppers with a snubbed rounded nose instead of a sharp tip. Those will work better with this tool.
So I almost love this tool. It's almost fantastic, but not quite right for me.
EDIT (1/30/12):
I've been using this tool for over six months now, and it's been steadily growing on me. I've decided that it's not such a bad thing to leave some heat hiding in the tips of the peppers. Otherwise it's possible to clean out too much of the heat and end up with a bland pepper. I think there was also a bit of a learning curve for me. I'm happier with this tool now than I was at the beginning. It's definitely a keeper and I recommend it.
Today I discovered yet another use for it. I had 50 pounds of Roma tomatoes to turn into salsa. This means peeling and coring an awful lot of tomatoes. I discovered that when you use this pepper corer on the tomatoes, the seeds and core are totally loosed up and you can simply open the tomato and slide all of the seeds, etc right out. I am thrilled with my new favorite kitchen tool.
Tricks I learned:
1. Larger the peppers the better
2. After you cut off the top, go in clockwise spin once or twice. Then spin Counter-clockwise as you come out.
