The pans, a second best choice recommended by Cook's Illustrated, are a really nice weight. They have warped a small amount but less than any other pan I've ever had. The only irritating feature is the rolled edge which holds dishwater. I've learned to turn the pan diagonally and let the water drain before removing it from the sink.
Update: August 2011. Still using these pans. They've only warped a small amount and we use them every week, usually several times per week. These are our go-to pans for nearly all oven roasting. The still clean up easily.
Mom still had hers in the original shipping box, as she was awaiting the installation of a new oven. Upon inspection, her pan had a couple of dents in the bottom, which was disappointing, as it was, after all, a gift. Well, the new oven was installed, and where the pan did fit in her old oven, this pan will not fit in her new one - Doh!!
So, at this price, I would recommend going with the Lincoln Foodservice half-sheet pan. Make sure to select the 13-gauge pan, although you must order from a third-party vendor. I did order a couple of the also highly-rated CIA stainless cooking/cooling racks, which fit perfectly in the Lincoln pan. They were backordered from Amazon when I purchased them for the Norpro pans, so I am assuming they will fit.
I don't burn stuff (as much) using this pan. Cleans up easily. The lip makes it very convenient for making toffees and things like that, and prevents things from spilling. Liked it so much I bought one for my mom as a gift.
The only complaint is one that's repeated, the glue strip used to adhere the label. It's like gooey and sticky and does NOT peal off the nice clean, smooth surface of the alum. pan and tears the label. Why? Beats me, it's like using a nail gun to tack a piece of paper on a tack board. I have the pan in the freezer, hoping the glue strip will harden enough to come off easier. And it is like a strip of narrow tape about 3" x 3/8" but is solid adhesive.
As for the size, this may be the standard but here's what I found. The description says 18x12, the label says 18x12 but I can't find a 12" measurement anywhere. It measures 13x18 overall but 10.5" x 16.5" in the floor of the pan. I'd really love to find a larger pan to fit ribs, brisket etc. that will go 18" to 22" easily, but I guess I'll need to pony up for a full sheet pan.
It would get 5 stars, but I have to join the mob on the adhesive thing. It's insane these days to use something like that, that doens't easily peel from metal. If it were on the bottom it may be OK, but it's not, its in the pan.
EDIT: Ok, so the freezer did nothing but make the adhesive get tougher and impossible to do anything with. But, enough hot water running over it to heat the pan, softened it enough to almost peel some of the strip off. What was left of course is the sticky glue and 2-3 rounds with "Goo Gone" and a paper towel cleaned it off. It's all good now.Read more ›
