They will be soft,and moist like the twinkies when I was a kid not the dry will last forever current variety. Downside--the filling tool is such fun to clean... use alot of dish soap, straight, to cut the grease. I refrigerate the batter. I make only 6 to 8 a day. Works that way. Always fresh. Store the filling at room temperature in an air tight container Will keep quite a while. This recipe makes 16 cakes 1/3 cup batter in each cup. The filling can be doubled and stored. Be aware I use a convection oven not your home radiant heat oven and do turn the pan around at 5 min.to cook evenly. My customers love them!

While other pan makers were gouging at 50, 75 and even 100 USD on the internet, Norpro via Amazon held true to its respectable, customer based values, typical to a real Pacific North West Company and continued to sell their products at honest prices. Though the 9 piece decorating set is completely functional its nothing to write home to your mother about so don't expect a top tier stainless steel & glass filling injector with an array of tips. The fact that it's included with this high quality pan for less than 20 USD to not only fill your baked delights but to decorate them or other items easily goes to show you how awesome Norpro is as a company. The dispenser tears down easily and cleans up in a snap.
I highly recommend this product over any of the competition.

SO. . .I finally got around to the adventure. I'm not much of a baker: oatmeal cookies, cake mixes, pies and sometimes bread. But, even I made something edible with this kit and the recipe provided. Learning from trial and error is important in baking. But, when two parts of a recipe call for a total of one (1) cup of butter and 1/2 cup of confectioner's sugar and 1 cup of regular sugar there should be red flags everywhere that a normal person could see. I ain't normal. I've never worked with 'confectioner's sugar' before. And, next time I'll know to be more conservative in following ANY recipe that calls for it: it's obnoxiously SWEET! Along with the 1/2 cup of butter and flour, diabetes is a piece of cake (pun intended).
The recipe for the cake material is actually not bad and likely healthier than the original Twinkies were: there's actually flour and eggs in this mix. I doubt there was a single natural ingredient in the original Twinkies.
The canoe pan worked great! Don't fill the canoes any more than half-full.
So, the cake recipe wasn't awful but I wonder if a pre-fab cake mix wouldn't have worked just as well. Thing is, you can control the sugar and butter content in your own mix.
The filling recipe was a disaster. And, probly' not totally the recipe's fault. I eventually substituted Cool-Whip for the filling and it worked out ok. It's important to inject the filling while the cakes are still a bit warm. This allows expansion without explosion: cold cakes explode, warm cakes expand. Next time around I'll try some blueberry jelly and Bavarian cream. (Do Bavarians really use this cream?: And, where exactly is Bavaria?-)
The injector and tips are ok. (I had nothing to compare them to). At the very least it was a not-so-bad introduction to piping and injecting. If I was gonna' get serious about this I"d buy a set with a larger capacity injector and stainless accessories.
Next I think I'll try some diet corn dogs. Hey! At least they won't be deep-fried. Ha!
