For various reasons I didn’t cook any hard boiled eggs for a while and I couldn’t find my egg timer when I recently wanted to use it. So, I bought a new one from Amazon and it works perfectly. (It does not have any smell that some purchasers have complained about.)
Of course, I probably don’t have to tell you that about two weeks after I received the new egg timer, I found my old one. :)
Here is a tip to prevent your eggs from cracking when you boil them; After placing them in cold water, bring the water to a boil. Then, turn the heat down enough so that the water stays hot but it is no longer boiling. Leave the eggs in the hot water until they are cooked which takes about 12 to 16 minutes to make hard boiled eggs. Alternatively, if you don't want to stand at the stove waiting for the water to come to a boil, you can bring the water to a boil, then turn down the heat and place the eggs in the hot water. Do not turn the heat completely off and leave the eggs in the hot water. If you turn the heat completely off, it'll take too long for the eggs to cook. When you leave the eggs in the water this long, the water will penetrate the shell because an eggshell is porous. This causes the egg white to completely stick to the Shell when you try to peel it.
The reason the eggs crack, is because when the water is at a full boil, it causes the eggs to bounce up and down on the bottom of the pot. By turning the heat down to a point where the water is not boiling, you avoid this problem.
HERE'S ANOTHER LITTLE TIP ABOUT EGGS;
Eggs will stay fresh for a long time. But, after you've had your eggs in the refrigerator for a long period of time, how can you tell if they're still fresh?
Here is one quick and easy way; fill a glass with water. Then, place the egg in the glass filled with water. If the egg sinks to the bottom of the glass, it's fresh. On the other hand, if it floats, it is no longer fresh.
The reason for this is that the eggshell is porous. This characteristic, overtime, allows air to get inside the shell. As a result, when air gets inside, the egg will float.
2 MORE TIPS;
1. If you want to make it easier to peel off the shells when your eggs are finished cooking, be sure to put a tablespoons of white vinegar in the water that you use to cook them. (Vinegar helps to break down the tough inner skin so that it does not stick to the Shell.) When they're finished cooking, hold each egg under cold running water as you peel it. The shells should slide right off.
2. If you put some unpeeled hard-boiled eggs in the fridge next to some raw, uncooked eggs, and you forget which eggs are the ones that are hard-boiled, here is how you can tell which eggs are the ones that are cooked without cracking them open. All you have to do is place the egg on a table or counter top and try to spin it. If it spins freely and easily, it is cooked. If it is uncooked, it will be difficult to spin because of all that raw egg sloshing around inside of it.
