I've had two of these pans for several years and recently got two more. This allows me to mass produce 48 mini-cheesecakes at a time. My first two pans have held up well with the only damage being scratches from where I used a sharp knife to separate the cheesecake from the pan.
Cleaning - I just recently discovered that using a long handled 'dish wand' that I normally use for cleaning deep drinking glasses is perfect for cleaning out the individual cups in the pan. The closest thing I could find on Amazon is this OXO Good Grips Soap Squirting Glass and Dish Wand . The one I use is all sponge at the bottom (it doesn't have the rougher blue end like this one has, which could damage the finish). But using something like this, it only takes a few twists to clean out each one without all the dings on my knuckles like in the past.
Cooking - I've had the best luck cooking my cheesecakes at about 300 degrees (in a convection oven), filling the cups leaving about 1 centimeter of free space at the top, and cooking them for about 15-20 minutes (depending on the recipe). I turn off the oven, leave the oven door slightly ajar, and leave them in for about 30 minutes before taking the pans out. This combination makes my best looking cheescakes. The sides are smooth (no accordion look of a cheesecake that shrunk down into the pan) and I don't have a big dimple/indentation on the top of the cheesecakes or cracks. As others have mentioned, I also place my cheesecake pans on another pan to avoid and drippings through the bottom.
