I bought the Norpro 6-Count Nonstick Donut Pan after reading all of the positive reviews and I have to say I have not been disappointed. My first batch of donuts ended up as donuffins because I put in too much batter and they came over the lip rather than rising up to to a donut shape. Then the second time around I put too little batter in and they ended up looking funny and flat. It takes a bit of time to work out the exact amount of batter to put in for each recipe to end up with perfect looking baked donuts but I was very happy with the pan and I am enjoying making donuts with it. Baked donuts taste awesome and ever party I have brought them too they have been gobbled up with only high praise!The two reasons that I gave this pan a four rather then five stars are:1. The non-stick isn't great but ok. I cooked the first few batches without butter/oil and found that there were a few locations on the pan that were not non-stick. The same part of the donut in the same two molds would rip every time. I know people said they didn't have problems if they waited longer before removing them but I didn't notice it always helping. Now I just butter the two problem molds and I haven't had an issue.2. About the 3rd time I used to pan I accidentally hit it against my cast iron skillet sitting on my stove when taking the donuts out of the oven . The pan completely bent where it hit and the non-stick has come off revealing the under layer which looks like it will probably rust after a few more washes. The pan is still usable so it isn't a big deal but I didn't even hit the cast iron skillet that hard :(. Just be careful with the pan, it is a little bit flimsy.

I ordered 2 of these pans because I wanted to make a dozen donuts at a time. I decided on the more expensive Norpro pan over the less expensive Wilton Nonstick 6-Cavity Donut Pan because of all the rave reviews. I now think that the Wilton would have worked just as well and is probably the same pan with a different brand stamped on it. I say this because some reviewers said that this pan is seamless, which I believe it was when they purchased theirs, but other, more recent reviewers, said that the pan does in fact have a seam now. They are correct, the pans do have seams at the lip, but it didn't hurt the look or texture of my donuts. These aren't fried, so there's no way to have a perfectly rounded doughnut. The doughnut is going to be flatter on the top regardless. So, I just flipped my doughnut as you would a cake and glazed the pretty side. The pan only came with a spiced doughnut recipe, which wasn't what I was looking for, so I looked on the internet and came up with the following recipe. They were quite tasty, but were meant for the mini doughnut pans, so it only made 8 of the larger donuts and I just cooked them a little longer until a toothpick came out clean. I dipped them in the glaze while they were still warm and they looked beautiful. I did butter the pans just to be safe and the donuts slid out perfectly leaving no residue behind.

Chocolate Cake Donuts

(from the label of the NORPRO Mini Donut Pan)

Donuts

1 1/2 cups flour
1/3 cup unsweetened baking cocoa
1 tsp baking powder
1/8 tsp salt
2 eggs
2/3 cup sugar
1 tsp vanilla
1/2 cup milk
2 tbsp butter, melted

Glaze

1 cup confectioner's sugar
2 tbsp HOT water

Preheat oven to 325°F.

Combine flour, cocoa, baking powder and salt.

In separate bowl, mix eggs, sugar and vanilla until thick.

Combine milk and butter.

Alternately combine egg mixture and milk mixture with flour mixture and mix until smooth and soft.

Spray pan lightly with cooking oil. Fill with batter 2/3 full. ( Kitchen Tip: Use pastry bag for easy & clean filling!)

Bake 8 minutes. ( They can take up to 15 minutes to bake. )

Cool. Carefully remove. Repeat with rest of batter.

Frost or glaze.

That being said, you can make some pretty tasty baked donuts with this pan. The texture and results remind me more of small rings of swedish almond cake though. Even though they weren't quite what I expected, they are still good and round and my 2 year old daughter still calls them donuts and doesn't know the difference. It just produced a nice looking set of donuts with a defined middle hole... spouse is busy doing Quality Control. Wish I would have bought a few more so I didn't have to lightly wipe off and let cool between batches. A definite recommend. There is a recipe on the back of the cardboard sleeve that is lightly glued in place (pulls off and roll/rub the glue off) around the middle of the pan. I love that this allows me to make baked not fried donuts, spouse loves that they're DONUTS. Easy easy cleanup, should give me many years of use with a little care not to damage the coating. Do treat this as a 'dark' pan for baking times.

You need to spray the pan with bakers joy or some type of coating spray. 2 of my donuts didn’t come out the pan as I hoped and they stuck in there. Now I have the pan soaking in soap water. So I’ll check it in a bit after I eat the messed up donut that didn’t come out. I already shoved down 1 and at least it tasted good.
