Norpro's vertical poultry roaster is designed to allow fats to drip off your chicken or other poultry as it cooks, leaving only juicy, flavorful, lower-fat meat. The deep drip tray collects the fat so that it doesn't coat your oven, although putting a baking sheet under the roaster is advisable for larger birds. The vertical roaster promotes even cooking, since all sides are exposed to the oven's heat. Carry the chickens ready to grill on a cookie sheet with sides and when you take it off the grill--hot!
My only gripe would be there is no effective directions on how to get the chicken off the roaster after cooking, with bubbling fat and drippings and iron-hot (or stainless steel hot in this case, but you know what I mean) metal to work with. You have to learn on the fly. My advice to soon-to-be purchasers is to dismantle the rods that form the vertical stand, and then take a pair of tongs (hands count as tongs in my book) to handle the chicken.
Another tip with handling the roaster out of the oven is to use a cooking pan underneath the roaster, or to use a metal clothes-hanger to hook the top of the roaster. I prefer the latter method because it (a) makes me look cool and (b) provides much more kitchen agility in moving the bird around.
This roaster will not compensate for lack of cooking skills. I haven't dried out my chickens, and the skin has been golden-brown, but not crispy at all. I'm working on it.
an oven tray. There are some intrepid souls who will only put this item and the chicken in the oven,
resulting in one messy, and smokey oven.
Important: this rack will not work in a small electric oven. The chicken will touch the upper
broil element, and you may not like that! In that scenario use the Bayou Classic 0880-PDQ
(ASIN B0009JXYR8 ) which has a lower profile, and provision for a beer can.
(I don't beercan, I brine.)
Before you sit the chicken on the Norpro roster, soak it in a brine solution for at least 1 hour.
No more dried-out chicken.
If you have trouble cleaning the roaster stand after use, use some Easy-Off spray in
a well-ventilated area.
