Editorial Reviews

From Publishers Weekly

Many of the 150 entries in this volume (the fourth in the popular Not Your Mother's series) are as appealing as they are quick and easy, as the subtitle suggests. Paillards of Chicken with Sautéed Cherry Tomatoes, Spaghetti with Zucchini, Basil, and Mint, Golden Risotto with Fresh Corn and Ginger, and Peggy's Chipotle Sweet Potato Soup strike the right balance of simplicity and allure. So do the Mustard-Soy Glazed Salmon with Brown Sugar and Ginger and the Verde Salmon in Parchment with Green Olives. Some recipes, however, have a last-minute feel, such as a Chicken Divan Casserole adapted from a Campbell's Soup label. But for readers who simply want a handful of good recipes for the everyday arsenal-this one's worth the price.

Many cookbooks promise "quick, healthy, and delicious" recipes, but few deliver. This one does! Henspserger is well-known for her reliable and innovative books on crockpot cooking. She has another winner with this book on weeknight cooking.

You'll find streamlined recipes for family favorites: Chicken Noodle Soup, Chicken Parmesan, Shrimp Scampi, Baked Crab Cakes, Flank Steak Beef Broccoli, Salisbury Steak with Garlic Mashed Potatoes, and many more. For the adventurous, there are recipes with exotic names that are actually easy to prepare - Chinese Spaghetti with Pork Sauce, Paillards of Chicken with Sauteed Cherry Tomatoes (a favorite at our house), Lobster and Asparagus Benedict, Duck Breast Salad. I like the balance in the book between the familiar and the unexpected.

With few exceptions, ingredient lists are short, the emphasis is on fresh foods, and ingredients could be found in a typical grocery. I loved the special sections on helpful topics, such as "About Vinegars", "Tips for Great Pizza", and "Steamed Seasonal Vegetables", to name a few.

I buy a lot of cookbooks. Most are good for a quick read and for trying a few recipes that stand out. This one is different. I expect to be using it for many years.

To begin, try the Olive Oil Cornbread and the Sour Cream Cornbread with Cheddar and Corn Kernals - both are outstanding!

Coming up with tantalizing meals that are nutritionally sound night after night after night is difficult at best, and Beth Hensperger is an expert at making it easy and fun to treat your family on any ordinary Wednesday night (or Tuesday, or Thursday, or even (shudder) Monday. Hensperger's latest offering is Not Your Mother's Weeknight Cooking, and if she were my mother, I would never have left home. For instance, Beth's Mexican Chicken with Beer Glaze and Sweet Potato Fries whips up in about an hour, and is deliciously spicy, using a spice blend that Jacquie McMahan shared with Beth. I love that Beth gives credit where credit is due as well. If you have ever moaned, "I don't know what to fix tonight," buy this book. It will help a great deal.

I don't typically write reviews on cookbooks - even though I read cookbook reviews before buying and cook almost every night from a different cookbook (I have a pretty large collection and use many of them for our favorite meals). After another great dinner tonight, I wanted to share how much I am loving this cookbook. So far I have made the chicken piccata, baked halibut parmesan, escarole & sausage soup and - tonight - salibury steak with garlic mashed potatoes. My kids and husband just raved over this one. In fact, each one has been a hit. I am excited to continue exploring Beth's recipes - they come together fairly quickly, are pretty healthy (you can easily reduce a little of the butter without sacrificing the dish) and are very flavorful. Highly recommend!

So far I have enjoyed all the recipes I have tried. The herb coated tilapia, shrimp provencal, and the black bean soup are just a few that I have loved so far. I do not consider myself very proficient in the kitchen. I need a recipe to make anything good. With this cookbook I feel like I'm eating a gourmet meal even though it was so easy to make. I also have her slow cooker cookbook and have enjoyed that too!

I love my other "not your mother's" cookbook I own in paperback, so I bought this for my kindle hdx. Big mistake -- it's not at all functional on the kindle. There is one page of links in the beginning to get to each chapter, but after that you're on your own. to get to any of the recipes you have to keep turning pages. Very frustrating!

Yummy, easy recipes with normal everyday ingredients. My only complaint is very minor - I ordered a used copy and there were some crusty food spots on some of the pages. Nothing too nasty, but it was unexpected. Great recipe book tho, very pleased, and superfast shipping from the seller.
