This is due to a small amount of required residual moisture, over dried maple sugar forms hard clump and should be avoided. Nova Maple Syrup is family produced in Northwest Pennsylvania, sustainably harvested from our own hardwood forests. I am happy that I was able to find this maple sugar in a 6 lb quantity. This product is great and cheaper than other brands which makes it much easier for me to buy more of it. We like to use maple sugar but never had a good source for a larger amount at a reasonable price. I will be buying this regularly as long as the price doesn't go up. Works so good in our homemade ice cream and whipped cream. Please don't up the price because we love this maple sugar and want to keep buying it forever.

long lasting powdered maple. I have too many bottles go bad because the liquid gold is used sparingly due to its' value. The reult is shelf life mold even in the fridge. By making as a sugar, this stores much longer. less weight and easier to use. I may never by liquid again.

I am on a very restrictive diet that requires the exclusion of cane sugar and this is a great alternative. Of course it has a different taste, more like brown sugar, but I'll take it given my restrictions.

OMG this maple syrup is more than it appears to be. I eat a lot of oatmeal and the maple syrups just don't give me the maple flavor I want so it was suggested to try this! So rich in flavor! I ran out of syrup Christmas so I added water to it heated it up and voila maple syrup everyone raved about!

If you've never tried maple sugar the flavor is delightful it is subtle and more complex compared to maple syrup. This maple sugar has a soft texture.
