NOW® Waxy Maize is a complex starch derived from Non-GMO corn that is naturally high in amylopectin, a high molecular weight, highly branched polysaccharide.  Unlike typical corn starch products, which contain an average of 70-75% amylopectin, NOW® Waxy Maize typically contains 90% amylopectin.  Amylopectin is slowly absorbed by the body, and then easily assimilated by muscle tissue, where it is converted into glycogen.  Glycogen can then provide a sustained source of glucose for energy.  Unlike maltodextrin or dextrose, Waxy Maize supports glycogen resynthesis well after you are finished working out and sustains energy levels throughout the day.*

And not the fructose that enlarges your liver and your waist, or chemical sweeteners. Waxy Maize is a natural mutation of corn that produces a starch made of a long chain of easily broken glucose molecules. More to the point, I put two scoops in 20 oz of water and sip on it when lifting weights. I find it keeps me focused, and keeps the acid and bile reflux at bay. Energy without the caffeine jitters. And a scoop with whey for recovery.

Does not blend with water- I have to keep shaking my bottle to keep the maize in suspension.

I initially posted this as a comment, but I think it would be helpful to make it a more complete review. Waxy maize is very different from corn starch in terms of the way it releases glucose into circulation -- that's its whole point. Most starches and glucose spike blood glucose soon after ingestion, producing a concomitant spike in insulin. That would favor converting glucose into stored fat. Waxy maize doesn't spike and releases its glucose over a longer period of time, say three hours. The total amount of glucose released would be slightly less with waxy maize, because it ends up being fermented by colon bacteria, but more would go into blood glucose where it can be used for energy, instead of being converted into fat by an insulin spike, which is followed by a resulting hypoglycemic crash. There are many possible applications for waxy maize, including nutrition in nursing care environments. Most people are interested in using it as an energy source (see above citation) or as a probiotic (because it ferments in the large intestine and may promote healthful bacteria there). The real question for me is how similar it is to Super Starch, which is scary spendy ($60 for 750 grams). Comparing the chart in the above-referenced paper and the paper on Super Starch by Volek on the Generation UCAN site, they look identical. It would also be interesting to compare these starches to potato starch or resistant starch such as Bob’s Red Mill Unmodified Potato Starch. Some may be better as an energy source during exercise, some better for weight management, some better as a probiotic. Any ideas? Even better, any data?

Mixed 1 scoop of this in a shaker with 16oz of water (following the instructions on the back exactly). Taste and consistency was a a lot like unflavored and unsweetened almond milk.

I was very surprised because all the pure, unflavored proteins I take taste horrible with just water (so I mix them with milk and a banana and they taste passable).

Before receiving this, I read other reviews where people were talking about how the would "sip it at the gym". I thought to myself "Haha, that's never gonna happen for me, those people are crazy." But now that I've tasted it I can really see being able to do that, I added a spritz of one of those Mio sugar free water flavor-er things (strawberry) and actually enjoyed drinking it. Nice flavor, nice consistency, not too thick, and didn't make me nauseous.

This stuff is magic. I use a scoop of this with some protein after a good hard CrossFit workout and I recover so much faster than with just protein alone. I have turned several friends onto this stuff who all love it now too. It is flavorless and blends decently well in a shaker cup. If you work out hard I would strongly recommend trying this. It is super powdery and will end up all over the place if you're not careful so exercise some caution when dishing it out.

Great carb source for intra/post-workout if you're bulking. It can be hard to get all the extra calories you need to make serious gains. This makes it a little easier.

Take immediately post-workout w/ bcaas and creatine. Then wait about 30 minutes to have your regular meal/shake (I use whey/casein/maltodextrin).
