I looked through several other "beginner" books on Amazon and it is hard to find something that is not just a cookbook with recipes. I really wanted something with basic instruction. This book is perfect.
It covers topics such as how to chop vegetables, what equipment you really need in the kitchen and which items need to be good quality/more expensive, the names and descriptions of kitchen tools and cooking techniques, how to tell if meat or pasta are done, and how to use up leftover ingredients in other meals/dishes. Yes, it also has recipes, but I chose it for the basic instruction.
