If you are in the market for coconut manna, this is a good brand. It is fresh and flavorful and works well both consumed raw and used in baked or cooked recipes.

There are also several other brands of organic coconut butter which are currently available on Amazon, including: Kevala, Artisana, and Jiva.

I have included below my personal recipe for vegan fudge, which I successfully made using this brand of coconut butter. I have also included recipes for making your own coconut butter, coconut cream, and a recipe from Nutiva for making a conveniently quick and easy coconut milk from this coconut butter.


Coconut manna is most commonly called coconut butter. It is also known as coconut meat puree and whole coconut flesh puree. It is not the same as coconut oil but, similar to coconut oil, at temperatures below 80 degrees F., coconut butter is typically solid. Coconut butter consists of dried, rehydrated coconut flakes or fresh coconut flesh which has been blended until it is very smooth, with a consistency that is similar to nut butter. Also similar to nut butters, there may be a layer of oil floating on the top of a jar of coconut butter when first opened due to the oil and the ground coconut separating. To deal with this issue, you can place the jar in a bowl of hot water to soften it, then stir it well. I use a butter knife to stir it because, again similar to nut butters, it can be hard enough to bend a spoon.

Here are some suggested ways to use coconut manna/butter:

1. Eat it straight from the jar, like nut butter.
2. Spread it on bread.
3. Spread it on a piece of dark chocolate.
4. Eat it drizzled on fresh, frozen or dried fruit.
5. Drizzle it on hot or cold vegetables.
6. Include it in a morning smoothie.
7. Include it in baked goods or candy.
8. Turn it into coconut milk. (See recipe from Nutiva below.)

You might wonder what the difference is between coconut cream and coconut butter. I have purchased both of them, and the first thing I noticed about them is that coconut cream tends to be sold in a can, and coconut butter tends to be sold in a glass jar, unless it is in a very large size, and then it is offered in a plastic container. Coconut butter is made from the full-flesh of the coconut, whereas coconut cream is made from just the liquid drained away from pureed coconut flesh. (See below.) In recipes, it is possible to substitute coconut butter and coconut cream for each other and achieve a similar result.



4 cups powdered sugar
1/2 cup cocoa or cacao powder
5 tablespoons canned coconut milk (or use coconut milk made with Nutiva Coconut Manna—see below)
1/2 teaspoon lemon juice
1/4 cup refined Nutiva coconut oil
1 tablespoon avocado oil (OR another tablespoon of coconut oil)
1 tablespoon Nutiva organic coconut manna
2 tablespoons water
1 teaspoon vanilla extract


1. Place parchment paper in the bottom of an 8x6-inch or 8x8-inch baking pan. Grease the parchment paper and the sides of the pan. Set it aside.
2. In a large glass measuring cup, melt the 1/4 cup coconut oil in the microwave, 30 seconds on high.
3. Whisk into the coconut oil: the coconut milk, lemon juice, avocado oil, coconut manna, and water.
4. Get out a large microwave-safe bowl. Using a fine-mesh strainer, sift the powdered sugar and cacao powder into the bowl. On top of this dry mixture, pour the wet ingredients and whisk together until very smooth.
5. Microwave this mixture on high for 30 seconds, then whisk well until smooth. Repeat.
6. Whisk the vanilla into the fudge.
7. Before it hardens too much, quickly scrape the fudge into the prepared dish and spread it evenly with a spatula. Place it in the refrigerator to harden, then cut it into 20 small squares (approximately 36 grams each) @ 140 calories per piece.



1/3 cup Nutiva Organic Coconut Manna
1 cup water
1/2 teaspoon maple syrup
1/8 teaspoon sea salt


1. Measure out the Nutiva Coconut Manna, then melt in the microwave on high for 10 seconds.
2. Place the Nutiva Coconut Manna, water, maple syrup, and sea salt in a high-speed blender and blend on high for 10 seconds.
3. Pour into a glass jar and refrigerate.



4 cups unsweetened, full-fat, shredded or flaked coconut
1 tablespoon coconut oil
1 teaspoon agave syrup or maple syrup
1/2 teaspoon stevia (optional)


1. Add all ingredients into a food processor or high-speed blender (I have a Vitamix).
2. Blend on high for 5-7 minutes, pausing every 60 seconds to scrape down the sides of the blender, until the mixture is smooth and creamy.
3. Transfer to a glass jar and store in the pantry.



8 cups coconut flakes
2 cups pure water
1 tablespoon vanilla
2 teaspoons liquid or powdered sunflower lecithin (thickener)
1/2 teaspoon stevia (OR 1 tablespoon honey or maple syrup)


1. Measure out the coconut flakes into a large bowl.
2. Pour just enough very hot, pure water onto the coconut flakes to cover them completely. Let it set for 20 minutes in order to soften the coconut flakes.
3. Place 1/2 of the soaked coconut into a high-speed blender (such as a Vitamix) with 2 cups of water. Blend it on high until very smooth.
3. Add the rest of the soaked coconut along with the vanilla, sunflower lecithin and stevia. Blend on high until very smooth.
4. Pour this mixture into a nut-milk bag, which is placed in a large bowl, and squeeze all the liquid out. (See below for uses for the leftover pulp.)
5. Store this coconut milk mixture in a container with a lid in the refrigerator for 3 days. The oily coconut cream will separate out and solidify on the top.
6. Scoop off the solid cream from the top and leave the watery milk portion behind. Store the cream and the liquid coconut milk in separate containers and place them in the refrigerator.


You can use leftover coconut pulp after making coconut milk while it is fresh, right after pressing it through a nut bag. You can also freeze the fresh pulp for later use. Or you can dehydrate the pulp and grind it into coconut flour. If you do not have a dehydrator, you can spread it thinly on a cookie sheet and bake it at 100 degrees F. for 2-3 hours. When it has cooled completely, grind it on high in a blender into flour. Store it in the refrigerator in an air-tight jar.

Fresh or frozen coconut pulp tastes delicious in a morning smoothie, added to cold or hot cereal, or to vegetable dishes or vegetable stews. Coconut flour is often used in paleo and gluten-free diets for baked goods.

I've used this a few times over the years. When you first open it, it is seperated with oil on top and thick pulp under. I used to just try to stir and scrape them together each use, which is annoying. This time I really needed it for more if an icing use, needed it smooth, so finally put the effort in and emulsufied the whole jar to have ready going forward. Now I'll do this every time for the first use so that the jar will be fully incorporated at room temp in my pantry. So much easier!
First, place the closed jar in a pot of hot water. Opening and gently stirring every 10 to 15 minutes (it's a process)...being careful not to slosh oil out the top. Once it's to the point you can dig around the bottom with a spoon and stir through the whole jar with major junk in the middle, use an immersion blender and emulsify completely. About 2 minutes, scraping sides in as needed. I used my immersion blender in my coffee after to not waste any if the butter that was stuck to it. A nice smooth addition to coffee. At this point, the Manna is smooth and liquid and can be used as an icing or drizzle. But will reseperate if left. So from here, leave a spoon or butter knife in the emulsified butter and every 20 minutes for about an hour stir until hard enough that it is set and won't resettle. Or you can put the jar in cold water for 10 minutes and stir every minute or two to cut down time or if your kitchen is warm. For future uses you can gently removw a few tablespoons at a time to use as a drizzle if need. Or can be easily spread on toast in the butter form.
