I have to say, that right off the bat, I can tell this is a nice knife. I'm not a Chef or even anything more than a guy who can barely cook, but I loved this knife. We have another nice knife that we bought of Amazon, and I cannot tell which I prefer. When we opened this knife, it was super sharp, and it did show me how dull my other knife had gotten. I do sharpen that knife regularly, but I guess my handheld sharpener wasn't getting the job done.
To rate this knife on some of the important to me aspects:
Sharpness: 10/10 - I hate to admit it, but I did slice myself a few times, even sliced my knuckle when I barely brushed it.
Grip: 9/10 - The grip itself is a little smaller than my other knife which I prefer for the grip over this one. The material on this grip is very nice and definitely allows me to get a "good grip" on it.
Blade: 7/10 - I'm not an expert on blades by any means, I can't tell you anything about size, or thickness, but this blade works well. There are already a couple of stains on the blade that I can't seem to wash away. They don't impact the knife at all, except visually.
Overall, this is a steal of a knife at this price point. I would be happy to buy again, next time my wife says she wants another extra knife for the kitchen.
We began looking for a smaller Chef's knife for her. First we tried a very inexpensive 5-1/4" stamped and bolsterless Santoku. The size was close, but the handle was awkward, and the edge on the blade was a gimmicky forever sharp type factory stamp that couldn't easily be re-sharpened.
Next we tried a Hampton Forge 6" Tomodachi all purpose knife. It was bright orange with a non-stick coating on the blade, and came with a plastic sheath making it easy to store in a drawer. It was an inexpensive stamped blade with no bolster. The size and fit of that knife was excellent. However, the steel of the blade was too soft. I could get a decent edge on it, but nowhere near as sharp as my other kitchen knives. And since the steel was softer, it wouldn't hold the edge I gave it for very long.
Finally we tried this knife, and I'm blown away. This knife is a full tang forged blade with an ample bolster and excellent weight and balance. It is the perfect size for her hands, and the comfort grip is outstanding. More impressive than that is the blade. It is made of hardened stainless steel that takes and holds an edge well. It arrived promptly, and was incredibly sharp right out of the package. Being me, I couldn't help but hone the edge a bit on my steel, and wow, it took a razor sharp edge that you can actually shave with. My wife tried it out by chopping some veggies, and loved it. The size, the fit, and the sharp edge were an instant hit. She even commented that she thought her new knife was sharper than some of mine.
The only thing I would note is that, as others have mentioned, it is a thin blade. The width of the spine at the bolster is comparable to more expensive knives, but it tapers and gets fairly thin at the tip (but not crtically so). However, I don't see this as a problem. In fact, I find it to be an asset. The thinner, hardened steel easily takes and holds a razor sharp edge fully from tip to heel. And the thin blade means less force required to push a thinner wedge of steel through the food you are preparing. This increases the perception of the knife's sharpness as it takes very little effort to cut through even the thickest of root vegetables. We are very pleased with this knife and very happy that our search for a perfect Chef's knife for my wife is finally over. We highly recommend this one!
