Style Name: 8" Chef Verified Purchase
This is an unpretentious, capable tool that is likely to get lost between $5 ginsus and $240 Shuns. It is comfortable to use, has reasonably good steel, and is balanced well. It is a good using knife and the attractive price just sweetens the deal. Do the math--a solid tool for $20 something, or a bit more weight and marketing for $120 to $240.

I am a bit of a tool nut, and I own German Wusthoff, French Sabatier and Calphalon knives made with German steel. They are fine knives, but let's face it, they can't do anything the good grips knife can't. Yes, a bit more weight comes in handy when you're doing serious chopping for hours on end, but I try to avoid that. I also favor a 10" cooks knife, but most opt for the 8" model. This is an ideal primary knife for a new cook who is ready to go, but too smart to drop a bundle on a brand name.

Rust has not been a concern, but I keep my blades clean. I don't throw them in the dishwasher and I steel them often.

Style Name: 6-1/2" Santoku
I reserve 5-stars for items that are mind-blowing in quality. This knife has replaced my original Chef's knife in the kitchen so I would say it comes pretty close to 5-stars. It is surprisingly light and balanced, but the weight seems mainly in the grip area. It is so sharp that my wife lopped off one of her fingernail tips accidentally. She has a greater respect for it now! The santoku has just enough curve in it to rock back and forth for finely mincing garlic if needed. Since the blade is so light, an experienced wielder can perform those rapid chopping motions with ease. I would say that my skills are not good enough to utilize this knife to its full potential. :)
[update 10-10-06] I used the santoku on raw carrots recently and I was amazed at how little effort was required! The knife is so well balanced that I could cut through a 1-in. diameter carrot with the near tip of the knife. No sawing or rocking motion required...just straight down cut!
[update 3-29-07] Still lovin' my Santoku! It is still sharp and I haven't sharpened it once!

Style Name: 8" Chef
I am a Chef Instructor at a training facility. I use these knives as a graduation present for my students. They have a good weight, shape and an ergonomic handle. OXO is a fantastic company. I SWEAR by their tongs! They rock. I have never been dissapointed by this line for the value and price. If you want to keep your knives sharp, NEVER put them in the dishwasher. Hand wash only!

Style Name: 6-1/2" Santoku
I am a culinary-school educated SAHM who loves to cook gourmet meals for my friends and family. I use all of my cook's knives frequently, and needed one that would cut and chop fruits and veggies (and herbs) better than my chef's knife. I'd been shopping around for a well-reviewed santoku (after seeing all my favorite Food Network show hosts using them), and decided on this one after reading the reviews and liking the economical price...I figured, if I didn't end up liking it, I wouldn't be out a lot of money. Well, I absolutely LOVE this knife. I recommend it to anyone looking for a good (if not great) santoku knife. My sister recently visited, and while helping make dinner one night, commented on how much she loved the knife...I'm certain that my glowing recommendation is going to lead her to buy the same knife! Great product, great value...would buy again in a heartbeat.

Style Name: 6-1/2" Santoku Verified Purchase
I bought this knife to fill the gap between my 8" and 5" blades. I use many OXO products but this is my first OXO knife. I find it is a good priced mid grade product, which is what I expected. It came fast and sharp, it feels great and fits my hand very well. I gave it 10 passes on my OXO pro steel hone and I can now shave with it. Overall I am very pleased with my new knife.
It may become my everyday knife.

I paid 19.95 with free shipping here @ Amazon. Well worth the price. I will update later after some use.

UPDATE 03/17/07:
Well I have found that this is my daily blade not because its the best one out there, but because of its fit to me. I have big hands and I find the blade nicely balanced. As far as the edge goes, I am pleased with the ease of keeping it very sharp. After use I hand wash/dry it (as I do with all my blades) then give it 5 strokes on the steel and its as sharp as ever an ready for the next job. Sounds like some of the reviwers need to learn how to use a steel.

Style Name: 4" Mini Santoku Verified Purchase
I recently bought this knife along with some bigger, or longer Santokus. If you have never used a Santoku, I highly recommend them over any paring knife for smaller jobs, and the larger ones for just about anything else. Their design is perfect for either chopping, dicing, or doing just about anything else with your various herbs and veggies that comprises the greatest amount of work you do with a knife in any kitchen. And, the cleaver like design makes it a fairly efficient chopper for anything that requires that kind of muscle. The larger Santokus can cut any roast or piece of meet down to size.

At 4 inches, this Oxo model is just about the smallest Santoku you will find on Amazon. But size certainly hasn't come at the disadvantage of strength and quality. This knife blade is a thick as they come full tang design that holds a fine shaving worthy edge easily and quickly with just a hand held sharpener. And at a full 7/8 of an inch diameter, its handle is as big, round and solid as any I have ever felt. It gives the user of this knife absolute command over any job of slicing or chopping that you may require of it. The quality of this knife is so fine that you may find yourself using it for every job in the kitchen that you would need a knife for. I particularly like its 4 inch blade that is much more versatile than a 6 inch, or even the 5 inch model. If you do a lot of cooking with fresh ingredients that need slicing and dicing, than you already know the advantages of a knife that is just right in its design, length, and balance. This knife is superior in all three of those categories. The only thing I may mention as to recommending this knife is that if you are someone with very small hands, you may find the handle a little hard to grip, or comfy.
