I purchased the 32 ounce size tamari from Ohsawa. I've purchased this before without any problems. This time, though, the company sent me Shoyu, which is made from wheat. As a person with a lot of allergies, wheat is a giant no-no. The company sends out a packing slip with the product that had their email on it, so I emailed them about this mistake. I sent the email in the evening when I'm sure they were closed. Someone from the company got back to me right away, and they mailed me a new bottle of tamari. They were really conscientious about it. Excellent service. The tamari is fabulous, too.
At one time, tamari was a by-product of making miso paste, and had no wheat in the recipe. That is not always the case these days, and the terms "tamari" and "shoyu" are today used somewhat carelessly, so read your labels for ingredients carefully. Tamari is often preferred for sashimi. Tamari, traditionally, tends to have a slightly more concentrated soy flavor than shoyu (so use a bit less than regular shoyu), and a tiny bit less salt. This tamari is the real thing. Slightly more viscous texture than the Ohsawa Nama (unpasteurized) Shoyu, and wheat-free. It is not cheap, but for all the right reasons. Then again, Kikkoman's organic soy sauce is also not exactly cheap. Nothing egregiously wrong with Kikkoman, mind you, but Ohsawa is in a different class. Warning: you will be ruined for all other soy sauces.
I'm not a fan of soy sauce, but this Tamari is in different league. Its flavorful, smooth, complex, rich and not as salty as typical soy sauce. I would always get headaches from soy sauce so avoided it, but this product doesn't bother me at all. I keep the opened bottle in the refrigerator and just pour out smaller amounts as needed into a dispenser I keep in the cupboard. I think this large bottle will last awhile, but I will definitely buy it again when I need to.
Not your average soy sauce flavor. I've been looking around for something that wouldn't affect my health and hormones in terms of soy sauce. I think I have finally found the right one! The flavor is subdued and subtle compared to original soy sauce and not overpowering. I myself am against any type of soy sauce or soy made here in the US since it is all chemically processed and will be very harmful to your health. Give it a try and see if you like it. If you don't want to commit, then get a smaller amount as it is pretty expensive for the amount you pay for.
