So what's a gal to do?, get this book, that's what.
So far, I've made the Blueberry Muffins, the Pecan Coconut Chewies and the Banana Bread and they were all outstanding, I really appreciate the effort the author has put into preserving the flavor and texture of these desserts, because you, the one that buys the book, might be willing to eat something that tastes or feels different in your mouth, but your family will not be willing to do any changes, as it is, my family was very happy about the desserts in every aspect.
Now, I'm off to make the peanut butter cookies and I have absolute confidence in what the results will be.
The author has been very thoughtful and has included all kinds of charts that will assist you if you want to make the recipe even healthier, by replacing white flour, eggs, etc. this way, you can play around and see what works for you and also a chart replacing other fats with olive oil, in case you want to convert your old recipes to olive oil.
Do buy this book, you won't be sorry and you'll have the incredible experience of baking and eating a dessert with the confidence that you aren't adding to your cholesterol count.
