Warning: this is not a review of the OliveNation extract's *flavor,* but rather of its ability—or not—to create a suitably awe-inspiring flame on certain tiki drinks.Many people will try to "torch" their cocktails with overproof liquor, and those people are amateurs. It's okay, we all were once. Everclear, Sambuca, Bacardi 151…they all burn too hot and therefore create a low, blue flame. Very difficult to see, and burns the alcohol out of your drink while also putting you in danger of sipping an unpleasantly warm refreshment.No no, if a show is what you want—and you're *setting your drink on fire* so I think we know that's what you want—then a little lemon extract is the way to go. Just not this lemon extract.The photo included with this review shows .05CC of regular old grocery-store-baking-aisle McCormick extract on the left, versus .05CC of OliveNation extract on the right. Exciting versus yawn, more like.I'm giving the extract three stars because I'm using it "off-label" as it were, and I'm sure the fine folks at OliveNation have no plans to reformulate their extract based on its ability to provide an amusing distraction. I'll try baking a lemon cake or something soon and see how it works as intended. However, I know other people are also perusing Amazon looking for the best deal on bar-quantity lemon extract and I'm here to say move along. Nothing to see here. Literally.
