Editorial Reviews

Review

“I love my stand mixer, but the concept of this book is hard to resist. … This is a great gift for a novice baker or anyone who prefers to be unplugged in the kitchen.”
Chosen as one of the Best Baking Books for 2013- Bakepedia - The Baker's Resource ®

“We’d like to give Yvonne Ruperti, author of One Bowl Baking, a collective fist bump. She’s put together a cookbook filled with uncomplicated treats that don’t involve hand mixers, stand mixers, or food processors. Plus, many of the recipes come together in about 15 minutes. Perfect for those of us who are busy—a.k.a. all of us.”
Redbook

“Whether you’re a novice baker just looking to make a pan of brownies or an experienced one intending to bake multiple, crowd-pleasing treats, "One Bowl Baking" rises to the occasion.”
The Christian Science Monitor

"For bakers with tiny urban kitchens who are short on time, or simply have an aversion to a sink full of dishes, Ruperti’s title is the ideal guide... Headnotes include mini-memoir moments, ranging from the author’s high school days and waitressing days to her experiences as a pastry chef, personalizing this delightful, well-designed and well-photographed title."
Publishers Weekly

“A dream book for beginners who can follow a sequence of directions or ganache-making pros who can appreciate the nuances between muffin and cake batter.”
-Austin American-Statesman

I love the concept of one-bowl baking with my busy life. I have made 2 things from the cookbook so far, and both turned out wonderfully well - the chocolate chip cookie in a mug, and the banana bourbon cake with bourbon whipped cream. The pictures are lovely, helpful, and plentiful. The recipes are fun to read, easy to read and understand, and easy to follow. I enjoyed all aspects of the book. The only thing I would wish for in a perfect world is a binding that lays flat on the counter; I had to prop the book open when making my cake, but it was worth it.

The book is not trustworthy- errors in metric conversions and ingredient lists.

For background, I am a big cookie baker. Particularly at Christmas, I bake dozens of recipes, usually new ones each year. I have been doing this for for decades. The theory of this book is great, but I have found multiple errors. My first hint was in the Rocky Road Fudge Cake recipe. The directions call for you to stir in (to the batter) chocolate chips, mini marshmallows, and walnuts. However, no marshmallows appear in the ingredient list.

More dramatically, The lunch box chewy peanut butter cookies are a total fail. First, the metric conversions are wrong. 1 cup of light brown sugar is not 200 grams- more like 150. Worse, 1 cup plus two tablespoons of flour is not 300 grams- it is 160 grams. When I followed the metric directions exactly, the cookies did nothing in the over. Way too much flour. I tried again the next day, correcting the errors I just mentioned, but they did not rise or change shape at all in the oven. After some research through other recipes, I believe the 1 1/3 cups (340 grams) of peanut butter is far too much.

One of the reasons I bought the book was that the author was a test cook for Cooks Illustrated. The CI obsessive approach to baking is something I really respect, but this book is a severe disappointment. I tried a couple of other recipes that were ok, but feel like I can't trust the book. Not worth my time to second guess everything. Don't bother.

I love this book. I own a lot of cookbooks and I'll say this is my second or third favorite. My only complaint is that it needs a lot more photos. The recipes are simple, not fancy, difficult, or time consuming. If you've never baked from scratch, or never even used a hand mixer before you'll have zero trouble understanding the recipes. Like most cookbooks this has useful information about baking ingredients and pans/equipment at the beginning and an ever-useful index in the back.

Most of these recipes use all-purpose flour and just a few use cake flour. For the one I made that called for cake flour I used all-purpose flour, making the proper adjustments.

Things I've made: Apple Crisp Bars, Double Chocolate Muffins, Sour Cream Coffee Cake, Hot Fudge Pudding Cake, Snickerdoodles, Sugar Cookies, Rocky Road Fudge Cake, Sweet Story Cupcakes, Cheesy Cheddar Scallion-Biscuits, Peaches and Cream Streusel Muffins, Sour Cream Chocolate Bundt Cake, Sour Cherry Almond Clafouti, Chocolaty Butter Cupcakes, Chocolate Mug Cake, Peanut Butter Cupcakes, Apple Cake.

I received this from the publisher in exchange for an honest review. Detailed review here wp.me/pLm4B-1q2

Great for a college student/small apartment liver. DELICIOUS recipes that gets constant compliments. The recipes make smaller portions (usually between 8-12 servings), making it easy to not have 40 cupcakes laying around with only you to eat them.

If you are like me and are more of a cook than a baker, check out this book. It might just inspire you to move out of your comfort zone. Good, approachable, tempting recipes that are a balance between classic and slightly different. My only real criticism is with the formatting of the book. On my Kindle there were two glitches that made it hard to move from one location to another. Nothing major; just a smidge annoying.

First, let me say how much I am a fan of this baking method and of Ms. Ruperti's style. I am an experienced home baker and already employ many of the techniques and shortcuts she describes. I enjoy that she uses ingredients that I have already in my cabinets. No muss, no fuss, and with very little time, a super-yummy home-baked dessert is hot and ready on the table. Yay.

I picked up this book that the library, looking for fresh inspiration and new recipes to add to my collection. I am sure that many, if not all, of these recipes taste wonderful. But I will never make a one of them, never. Basically every recipe calls for between 10 to 16 tablespoons of butter. For example, for a 9" square pan of blondes (which makes 16 bars -- said no actual home baker, ever), her recipe calls for 13 tablespoons of butter. Why on earth would I do that when I have a blonde brownie recipe that my family adores that uses 5 tablespoons? To make less than 2 dozen chocolate chip cookies, according to this book, one should use a stick and a half of butter. Or, again, I could use my own recipe that we like that uses less.

Again, yes, it's dessert. Yum! It's not supposed to be good for you! But I am thinking -- economically and health-wise -- that there are much better recipes out there. Read this one for techniques if you must, and check it out from the library. Might be helpful for bake-o-phobes? I don't know.
