It really does explain how to run a restaurant, warts and all. It is very practical and wise. It covers everything from starting out, handling finance to food, ways to deal with staff, marketing strategies and the pitfalls of owning - or buying - a food business.
I recommend this book for those in the restaurant industry and also to those who own a business.
Ps I love that he does not just recommend that writing a business plan and working hard will make everything work out fine as all other books seem to suggest.
