Product Description

This blend of Hard Red Spring Wheat has been designed for artisan bread by Artisan Bread Bakers. Our

Whole Wheat Flour is milled 100% whole, which means we do not separate the components of the wheat kernel. Removing the nutritious component of the wheat kernel known as the ‘Germ’ is common among most large commercial milling operations. Rest assured, all that lovely nutrition is in our flour.

100% Whole Wheat Flour is perfect on its own or blended with another flour, like our Organic Type 80 Wheat Flour, to make authentic sourdough, rustic European, and American style breads of any shape and size. This flour also works very well in bread machines and for making: laminated doughs (like croissants); quick breads (like banana bread); brownies; and, is spectacular for making cookies with more vitamins and minerals than All Purpose Flour.

A Baker’s tip: 100% Whole Wheat Flour needs a little more water than other types of flour. You will need to add a little more water when using this flour as a substitute for ‘All Purpose Flour’.

What is “ash” and why would I want it in my flour?

Every wonder what those little specs in your flour are? Those are bits of the bran and the germ that are intentionally left in the flour to increase the flavor, nutrition, and look of the flour. The higher the number, the closer to whole grain the flour is. A number in the name of a flour is an indication of the ash content of that flour. For example, Type 70 is a 70 ash and Type 80 is an 80 ash. This naming convention is the way some common types of flour are named in France.

    I bake sourdough bread primarily and rye bread. When making a "light" rye I like to use a mix of bread flour and rye. I have used King Arthur brand for years and it is a good product. But I found this and wanted to give it a try. I liked it so much I bought a second bag! (I bake bread weekly.) With the $10 off coupon that was great on this second bag I got. The flour itself produces a good quality, great tasting loaf of bread. The flour is fresh and the bags I received have a substantial shelf life into 2022. Stored properly it will keep well. You can bag it up and store in the freezer or if you have a cool, dark storage area, that works well too. The first bag I got the bag was within another huge plastic bag which was great. The second bag was not packaged that way, but no rips, tears or punctures in the bag. It's very thick paper, multiple layers, very sturdy. I highly recommend this product.

    The organic rye is excellent but if you are making bread, you have to get it right to have it rise satisfactorily. Plenty of Vital wheat gluten, use Apple cider vinegar and enough yeast. Give it plenty of time to rise before popping into the oven
