Have used many Anthony’s products in my keto baking. Love the smell of coconut flour. Great texture. Modify wheat flour recipes to 1/4 cup coconut and 3/4 almond to 1 cup wheat flour.

Recently, I decided to go on the Keto Diet that requires very minimal daily carbohydrates...usually limited to 50g/day to properly put your body into Ketosis. As a Chef, this is a challenge to come up with culinary creations that are low carb, yet delicious and filling.
This excellent Organic Coconut Flour has been a true saviour for me! I have experimented with many recipes that I have converted from wheat flour use to this flour with great and tasty results...all while keeping the carb load well below ketosis levels.
Easy to work with and finely milled, it absorbs liquid much more than other flours, so you must adjust and experiment to find the right ratio to use, but in the end, it is soooo satisfying to be able to make great food and yet still maintain that low carb level! It is also completely Gluten Free.
The flour shows 8g carbs per serving, but actually has a MUCH lower NET carb load due to the fiber load that offsets basic carbs. That means the carbs are not fully used by your body and pass through appropriately.

I'm not really sure how to fairly review this because I think the brand is good as far as coconut flour goes. It's just that I discovered I don't really like coconut flour that much. It's not as easy as some flours to use as a replacement and it is so fibrous it gives me stomach problems. It worked well in the recipes I used it in, but I won't be making those recipes again because they hurt my stomach. But I don't think it's fair to take too many stars off because the product itself seems fresh and of good quality. It smells very natural, fresh and coconut-y and is well-packaged.
I am keto and have diverticulitis. Cannot have nuts or seeds so there are so many foods I cannot make because on keto, options are limited to nuts or seed flours all if which I can no longer have. Had been using another brand of superfine ground coconut flour with good results but was higher in carbs and pricier. Decided to try this brand and it is finely ground too, wish it was even more finely found though, but is ground enough so far to not cause diverticulitis flares. Taste is good, tastes like coconut. Best deal for coconut flour I have found. Bag is resealable although my bag will not reseal so had to put into a container. Works in all recipes I have used it in just have to use much less than most nut or seed flours and that takes trial and error. So glad to have a flour alternative that I can actually have. I have made keto doughnuts, cakes, breaded crusts for chicken, pie crust, and so much more and my family and I love it all. It will leave a coconut taste in whatever you cook it in so if you dislike coconut you might have an issue. If using very little and other ingredients the taste isn't as noticeable. It has a different texture than almond flour though. Before my diverticulitis I used almond flour and it just seems to make things lighter whereas coconut flour makes things more dense or heavy feeling. If keto and cannot have seeds/nuts and or have diverticulitis issues like me, I recommend using this flour.

It is really gluten free because I am intolerant to gluten and have had no issues since I started using this.. I tried another brand Viva and regretted it. I believe it was mixed with something that had gluten even though it had "gluten free" written boldly on the packet. have since come back to buying Anthony's and will continue using this brand as long as I use coconut flour.
