You will receive one healthy Kombucha SCOBY (symbiotic culture of bacteria and yeast) approximately 2 1/2 - 3 inches in diameter and about 1/8 - 1/4 inch thick. The SCOBY will be packed in approximately 1/4 cup of starter liquid (extra strong Kombucha tea). You may see "chunks" of yeast and bacteria starting to grow when it arrives. This will be enough to ferment about two quarts of sweet tea. A new baby SCOBY grows with each new batch of tea - so you can conceivably increase your production with each batch. A few months ago, after hearing all of the health-food craze about Kombucha and purchasing a few ready-made drinks from the store, I decided to buy my own culture so that I can ferment my own probiotic drinks for less than in store and with the ingredients that I wanted. Upon arrival, the culture worked as promised.
To get the process started, traditionally you should heat water until it's warm and dissolve a few cups of sugar in it, as well as a few tea packages for flavor. This will be the food for the Kombucha. Submerge the mushroom in this water and leave for a few days. After this, take any bottles, or mason jars that you may have and bottle the drink. It can last around 1-2 weeks in the refrigerator before you enjoy it.
Overall, it was as described and I would recommend it to anyone looking for an affordable option to get the benefits that Kombucha has to offer. they are going for now. I had to cut the giant scoby into 4 pieces to start new tea batches and it was a surprise to me that it was not so easy to cut, I thought it would be a gelatinous goo but it was a thick, rubbery membrane that took work to cut through with the scissors. I am very pleased with the new scoby and the tea that both came from that skinny little mother. Good things DO come in small packages!
Since then, this SCOBY grows like crazy; it usually covers the entire top of the liquid in my 2-gallon crock. I have to trim it down at least once a month or it starts to grow out of the top of the crock! Due to the size and strength of the SCOBY, and the fact that I keep the crock next to the fridge (which generates some warmth), my brew is normally done in 5-6 days now. I make 6 quarts at a time. When combined with the two pints or so of starter tea that I leave in the crock each time, the end results are just perfect for filling 12-14 flip-top bottles.
I'm really happy with this SCOBY and recommend it to anyone who wants to get started making kombucha. Also, the Amazon price for this SCOBY, along with a 2-gallon crock and some flip-top bottles, was WAAAAYYY less than those kombucha starter kits that are advertised on some websites. Do yourself a favor: make your own "kit" from Amazon and save yourself some $$$.
I just harvested my first gallon (the directions/recipe recommends a half gallon to start) of kombucha. This little scoby really works! I brewed (fermented, I guess?!?) for 11 days, and the kombucha is nice and robust. I love it. I've uploaded a second picture. The original scoby stayed about the same size but it grew a second scoby that is about 5 or so inches. This was totally worth the time.
