There is no tuna (to my palate) that comes close to a ventresca cut from a quality piece of bonita. It simply has to be experienced to make a believer out of most. This brand, cut and grade of tuna are my favorites and combine to be one of my pleasures in life.

This is the pinnacle of tuna and the top tier of Spanish grades of both cut and tuna species. As for the cut, it is from the choicest part of the fish and accounts for the term 'ventresca', which alerts the consumer that this is a cut from the tender belly area of the fish. This term works with lesser grades of tuna as well, including Ortiz Spain El Velero Yellowfin Ventresca De Atun Claro. Indeed, the cut is what sets this apart. Even a ventresca cut from a lesser grade, such as the bottom rung rojo grade, would be a delicacy (though I doubt that any canning company would even bother with that since the difference between the two top grades and rojo is vast.)

Grading the tuna is done by species. This one is at the top of the tier and is what we commonly call albacore in English. The next down and still highly valued is the claro grade known as yellowfin in English. All other species are lumped into 'rojo' (red).

So, when you add the fact that the fish grade used in this product is top tier, with the fact that the cut is from the most desirable part of the fish you have something special. Add in that Ortiz is a quality brand and this becomes a real treat that you can set out for tapas when entertaining guests. And I guarantee that it will be quickly consumed. Personally, when entertaining any group larger than two I use the less expensive yellowfin I cited above.

This is not your average canned tuna at $10.00 a tin, but if you are looking for a gourmet canned tuna experience this is it. I have seen the same product in Michigan for $17.99 a tin, so $9.99 is quite the bargain. I made a simple butter lettuce salad, flaked the tuna on top, reserving the olive oil in the tin for the dressing of sea salt, ground pepper, lemon juice and a couple of capers. It got rave reviews.

Ortiz has different grades and Amazon has the best prices, try one of each in a side by side comparison, include a can of the best tuna you can find in your local grocery store then decide for yourself.

On a side note, has anyone noticed that Amazon's prices are better that eBay prices?

Just came back from Spain and was reading The New Spanish Table by Anya von Bremzen. She had a sidebar where she raved about Ventresca Tuna (of course, what she was eating was specially canned for Chef Juan Mari Arzak, the Spanish heavy hitter.) But after she raved on and on, I decided to see what the hoo-ha was about. So I bought a can. And it made just about every other canned tuna I'd ever tasted seem like cat food. This stuff is the real deal.

The best canned tuna I've ever had....but it's too expensive on Amazon. Go to Vitacost and click through Ebates beforehand to save even more. The box is so nicely embossed (I'm an artist), like letterpress, that it's almost like a gift to yourself. The inside tin is void of any branding and is just silver maybe with an expiration date. The tin itself holds very little fish...really only enough for 1 adult eating it addition to other things...

The tuna itself is not fishy at all, but is quite salty....that is probably my only complaint, so plan to pair it with something that lacks salt to balance it out.....I used this to make a wonderful Italian dinner. I combined Jovial brand gluten-free capellini (also on Vitacost), a few tablespoons of Bionaturae Organic Tomato Paste (also on Vitacost), fresh grape tomatoes/zucchini, and virgin olive oil.......I mixed in the tuna in the last few minutes just to warm it up without cooking it, per se. Very, very delicious. Also, I ate it recently straight out of the can, and could have even paired it with crackers...

UPDATE: Two other brands to try...Cuca of Portugal and Vital Choice of the USA.

I bought this tuna because I'm pregnant and it would fall under the "strange craving" category. I live in a rural area and getting good tuna (canned, fresh, or otherwise) isn't really a thing here. I thought the taste, texture, and smell of this tuna was excellent. However, it was pretty oily... maybe too much oil for my taste. I normally buy tuna in water. For some reason, I expected this to be tuna in olive oil (it's clearly not advertised that way, so I don't know where I got that...) but it's just tuna in a neutral oil (veg? canola?) that really coats the palate. I wish I could get it without all the oil, hence why 4 stars instead of 5. I could have gone to the trouble of draining it really, really well, but it was so tasty right out of the tin I couldn't be bothered. And.... dealing with all the tuna oil didn't appeal to my pregnant fancies. I will purchase again.

This is really good tuna; it's pretty much impossible to believe it's at all related to the stuff in a can we get in US supermarkets. I initially bought the Ortiz Bonito Del Norte, then I decided to upgrade to a real ventresca tuna (this one). This tuna is visually more impressive than the Bonito Del Norte, but I didn't detect a significant difference in flavor or texture, so it isn't worth the extra money to me.
