I'm not sure what Francie was on about but I love this book. I owned a copy when I worked at the Waldorf in 1978 but it got lost in moving. It does take a general knowledge of cooking to create the recipes but I've made dozens of them, and although they aren't quite as good as what the chefs at the hotel do, mine always came out very tasty. They are excellent recipes. This book is worth it just for the insight into how food was prepared in the late 1800s at one of the world's finest hotels. I bought an extra copy for our hotel's kitchen staff.

Amazing, from a time when food still tasted great! Recipes are from scratch and can be prepared extremely safely and to delicious raves at home!
