I tested both a cucumber and a potatoes with all the blades. The only blade I had difficulty with was the crinkle cut blade. My potato just kept getting stuck, so I used a pair of scissors and pulled the blade up some. Then I tried a cucumber. Although it worked better, this blade just did not flow like the rest of the blades. Therefore 4 stars.
This mandoline is great for vegetables, meats and cheese. The slices are all even and it’s really quick in getting the cutting accomplished. The blades are sharp and the attached vegetable/meat holder keeps your fingers from getting cut. The stand on the back puts the mandoline at just the right angle for quick cutting. Also, included is a storage box for the blades not currently in use. What a great way to keep all the parts together. Just flatten the mandoline and then set the storage box on top with the extra blades.

I am so pleased with this purchase- I've had this product for a long time now and am surprised by how often I use it and how well it has held up. I absolutely love slicing potatoes with this tool (for au gratin potatoes or "chips") because this can slice them super thin and every slice is the same thickness. When making au gratin potatoes I also do slices of onion (super thin) to layer in between some of the potatoes and this is absolutely perfect. I can slice through all the potatoes and onions to make a large casserole dish of au gratin potatoes in about 10 minutes. That seriously cuts down on prep time.
The one thing I have learned with this through much use is that there's a certain way to wash this which works best and allows for least wear on the blades/unit. Immediately after finishing using mandolin, rinse the entire unit under warmish water. Make sure to rinse away all particles of food etc. that are stuck to the back of the blade. At this point you can set in the sink until it's time to do dishes. When you do dishes just lightly (we find a scrub brush works best) wash soapy water over all of the pieces you used and rinse with cold water. If you let any food remnants/juices sit on this unit it becomes really difficult to clean (similar to a food processor blade) and we've found this washing method is the easiest and keeps everything looking like new!
In the end I absolutely love this kitchen device. I've been surprised by how much I use it and every time I use it I find myself loving it more and more. I would highly recommend buying one if you're on the fence.
I've wanted a mandolin for awhile now but have always hesitated spending the money on one because I'm not sure how much I'd use it. Let me just say that I wish I had bought this sooner because I will certainly use it a lot. I experimented with a carrot to begin which this mandolin struggled with a little bit (that might have also been operator error because it took me a bit to figure out how everything came together) but when I tried an onion it worked flawlessly. I had perfect cubes of onion in no time at all and with minimal effort.
We make jicama slaw frequently and it's always a real pain to slice up all the jicama- I can't wait to use this mandolin to significantly cut down the prep time for one of our favorite household dishes.
The mandolin itself is well put together- it isn't too heavy (yet is still substantial) and folds up for easy storage. I also love the fact that this comes with a little storage rack for the different blades. This allows me to store the entire unit on a shelf without worrying about cutting myself on a blade when I'm reaching in for something else. I will probably end up attaching the blade storage directly to the shelf with a little bit of sticky tape so I can just reach in and grab a blade when I want one.
The one gripe that I have about this product is the lack of real instructions. There are a few pictures on the side of the box that tells you how to remove a blade from the unit and somewhat use the unit but there aren't any really helpful instructions to allow the novice user to just start slicing and dicing. With a little trial and error though this isn't too much of a problem- just don't use this for the first time right before you make a fancy dinner for all the neighbors...
In the end I am super happy with my purchase and wish that I had bought a mandolin sooner.
