Favorite recipes so far are:
1) Candied Coconut Walnuts (I make with Pecans). This is a great treat to have when guests are over or for holiday snacks.
2) Granola Bars. If you let the chips melt, i.e., mix them in before the liquids have cooled off, you'll have something that more closely resembles a chocolate confection. So cut them into 1" squares. :)
3) Seeded Crackers. You will NOT miss wheat-based crackers after trying these!
4) Slow Cooker BBQ Beef. Out of all the Paleo entrees I've tried in my various cookbooks, this is by far the tastiest.
This is a high-quality cookbook with easy to understand instructions. Thank you Ms. Credicott. My brother, who is horribly gluten-intolerant, also thanks you; we can all now enjoy the feasting that goes on during the holidays.
